A reference for people buying, using, and maintaining Japanese kitchen knives. It assumes you are past the "which brand is best" stage and want to understand what actually differs between one knife and another.
How this guide is organised
Choosing a knife covers the things that determine how a knife performs: blade shape, steel, grind, heat treatment, construction, finish, and handle. Read Grinds and Heat Treatment first if you read nothing else, because those two decide more about a knife than the steel name on the spine does.
Who makes them is organised by region, because region still predicts a great deal about how a knife is built. Sakai runs on division of labour, so a Sakai knife is usually a smith plus a sharpener plus a house, and you will find those three filed separately. Sanjo, Echizen, and Tosa workshops more often do everything under one roof, so one entry covers the knife.
Sharpening and Buying are practical. Reference holds the glossary.
What this guide is and is not
It is a compilation, written from maker sites, specialist retailers, and community sources, and checked where checking was possible. Where something is contested, it says so. Where a claim rests on a single retailer page or a forum post, it says that too. A guide that hedges in the right places is more useful than one that sounds certain about everything.
It is not a review site, it does not rank makers, and it takes no position on which knife you should buy. It is free, non-commercial, and carries no affiliate links.
A note on names
Japanese maker names are romanised inconsistently across the English-language market, and the same person routinely appears under two or three spellings. Where sources disagree, the alternatives are noted in the entry. Several makers are also regularly confused with each other; those cases are flagged where they occur.
Blade Shapes
Shape names describe a profile, not a quality tier. A gyuto is not better than a santoku, it is longer and more curved. Most of the names below overlap heavily, and several are marketing categories that different makers apply inconsistently. Treat the names as a starting filter, then look at the actual specs and photos.
How to read a profile
Four things determine how a shape behaves. Everything else is detail.
Edge curvature. A flat edge sits on the board along its whole length and rewards push cutting and tap chopping. A curved edge (belly) rewards rocking and makes it easier to draw the tip through a cut. Most Japanese general-purpose shapes are flatter than their Western equivalents, which is the single biggest reason a gyuto feels different from a chef's knife of the same length.
Tip geometry. A gradual, low tip (gyuto, sujihiki) gives you fine point control and good board contact. A sheepsfoot or hoof tip (santoku, nakiri) trades tip work for a fully flat edge. A reverse tanto or k-tip (bunka, kiritsuke, honesuki) gives a strong, precise point because the spine drops down to meet the edge rather than the edge sweeping up.
Blade height. Taller blades give knuckle clearance and a bigger face for scooping, but they wedge more in dense produce unless the grind is good. Nakiri and chuka bocho are the extremes.
Bevel. Double-bevel knives are ground on both sides and are symmetric in the cut. Single-bevel (kataba) knives are ground on one side with a hollow (urasuki) on the flat back. They cut with a steering bias, are handed (right or left), and take real practice and real sharpening skill. Every traditional Japanese shape below that is marked single-bevel carries that cost.

Japanese shapes: general purpose
Gyuto. The Japanese take on the Western chef's knife, and the default recommendation for most people. Compared to a German chef's knife of the same length it is thinner, lighter, harder, flatter through the middle, and has a finer tip. The belly still supports rocking, but the flatter section rewards push cutting. Common lengths are 210 mm and 240 mm; 240 mm is the standard professional size and is a lot of knife for a small home board. Good at nearly everything soft, poor at bone and cartilage.
Santoku. The short, flat, tall general-purpose knife most Japanese home cooks own. The name means roughly "three virtues," usually read as meat, fish, and vegetables. The edge is close to flat with a sheepsfoot or hoof tip, so it push cuts cleanly and is easy to keep on the board, but the blunt tip limits fine point work. A 180 mm santoku covers most of what a 210 mm gyuto does in less counter space. Note that santoku and bunka are related but not the same knife, despite frequent conflation online.
Bunka. Effectively a santoku with a reverse tanto (k-tip) instead of a rounded tip, usually slightly taller and flatter as well. You keep the flat push-cutting edge and gain a strong, precise point for scoring skin, working around joints, and detail work. Sizes cluster at 165 mm and 180 mm. Opinions differ on whether the k-tip is genuinely more useful or mostly aesthetic; if you never use your tip, a santoku is the simpler choice.
Bannou. A catch-all name rather than a defined profile. It translates roughly as "ten thousand abilities" and is used by many regional makers for their volume-selling all-rounder, typically in the santoku and bunka size range. Two bannou from different makers can be very different knives. If you are shopping this category, search santoku and bunka alongside it, and judge by the specs and photos rather than the name.
Nakiri. The double-bevel vegetable knife: tall, thin, flat edged, squared at both ends. The flat edge contacts the board along its full length so cuts finish cleanly without the accordion effect a curved edge produces. The height gives knuckle clearance and a large face for scooping. It cannot do tip work at all, and thin blades in the 165 mm to 180 mm range can wedge in dense root vegetables if the grind is poor. The single-bevel professional equivalent is the usuba.
Petty. A small utility knife, from the French "petit." Sizes run from about 75 mm to 180 mm, with 120 mm to 150 mm the useful range. Below roughly 120 mm it is an in-hand paring knife; above that it is a board knife for shallots, garlic, herbs, and small proteins. Practically, this is the knife you grab without thinking. Larger petty (150 mm and up) blur into a small gyuto.
Kiritsuke. The traditional kiritsuke is a long, flat single-bevel knife with an angled clipped tip, functionally a hybrid of yanagiba and usuba, and it demands the technique both of those require. It is widely reported as a head chef's knife in traditional Japanese kitchens, though this is repeated far more often than it is documented. What most retailers now sell as a kiritsuke is a double-bevel "k-tip gyuto," which is a normal gyuto with the angled tip and none of the single-bevel difficulty. Check which one you are looking at before buying.
Chuka bocho. The Japanese-made Chinese-style cleaver, literally "Chinese kitchen knife." Tall rectangular blade, commonly 180 mm to 220 mm long and around 100 mm tall. It is not a meat cleaver: it is thin, hard, and sharp, meant for vegetables, boneless protein, herbs, and crushing aromatics, not for bone. The face is unmatched for scooping prepped food off the board. The height takes adjustment and it needs a large board.
Japanese shapes: protein and butchery
Sujihiki. The double-bevel slicer, essentially a long, narrow, low-tipped gyuto with minimal belly. Narrow width means less surface friction, so a single long draw stroke through a fillet or roast comes off clean instead of tearing. Common at 240 mm and 270 mm. It is a specialist: too narrow for board chopping, no knuckle clearance, and the length is unwieldy for anything else. The single-bevel counterpart for raw fish is the yanagiba.
Honesuki. The Japanese poultry boning knife: short, triangular, with a thick spine, a stiff blade, and a k-tip. It is stiff where a Western boning knife is flexible, which is the key difference. The stiffness and thick spine let it drive through cartilage and joints, and the strong point works into tight spaces. Often ground asymmetrically. Not for cutting bone.
Garasuki. The same profile as a honesuki but larger, thicker, and heavier, developed for kitchens breaking down whole chickens in volume. Usually around 180 mm. Everything true of the honesuki applies with more mass behind it, which helps on larger birds and cuts of meat and hurts if you want a nimble knife.
Hankotsu. A stiff boning knife with a straight edge rather than the honesuki's triangular profile, designed for working hanging carcasses with a reverse grip. Short blade height lets it turn along bone and connective tissue. Some are sold unsharpened or barely sharpened for edge strength on rough work. For poultry, a honesuki is the better tool.
Deba. The single-bevel fish breakdown knife, thick through the spine and heavy at the heel. It is built to take heads off fish and split through the small bones and collar of a whole fish using the heel, then use the tip for finer separation. It should not be used on heavy bone. Sizes run 105 mm to 240 mm; 165 mm handles most home-sized fish. The ajikiri is a small thin deba for small fish such as mackerel. This is a demanding knife to sharpen well.
Funayuki. A thin, light general-purpose knife historically associated with fishermen preparing catch on board, and the name is often translated as something like "boat going." Usually double-bevel, though single-bevel versions exist, in roughly 150 mm to 210 mm. In practice, funayuki is a loosely applied regional name and the shape varies widely between makers, from a small deba-like blade to something close to a santoku or petty. Verify the actual geometry rather than relying on the name.
Japanese shapes: single-bevel traditional
Yanagiba. The classic sashimi slicer: long, narrow, single-bevel, with a pointed willow-leaf tip. It is used with one long pull stroke, not a saw, and the flat back with its urasuki hollow lets the edge glide instead of tearing the cut face. The name yanagiba means willow leaf; shobu is an alternate name for the same knife. It is associated with the Kansai region (Osaka and Kyoto), while the squared-tip takohiki is the Kanto counterpart. Sources disagree on which region uses which name, so treat the naming as contested. Common at 270 mm and 300 mm.
Takohiki. The Kanto-region sashimi slicer: same job as a yanagiba, but with a straight edge and a squared-off tip instead of a point. Usually thinner and narrower than a yanagiba. The name literally reads as "octopus pulling," but the connection to octopus is commonly reported rather than settled, and it is used for sashimi generally. The sakimaru takohiki is the rounded-tip variant.
Usuba. The professional single-bevel vegetable knife, and the reason the nakiri exists in its double-bevel form. Tall, thin, flat edged, ground on one side with a hollow back. The Edo or Kanto style has a square, blunt tip and is the version most commonly exported. It is built for katsuramuki, the rotary peeling of a daikon into one continuous translucent sheet, which the flat single-bevel face makes possible in a way a wedge-ground double bevel does not. Thin edge, easily chipped, high skill demand.
Kamagata usuba. The Kansai-style usuba, named for its sickle-shaped (kama) profile: the spine curves down to meet the edge at a point. It does everything the Edo usuba does, plus tip work, which makes it the preferred style for kazarigiri, the decorative carving used in kaiseki presentation. The pointed tip is fragile. Note that some retailers use "kamagata" for unrelated small knives; in standard usage it refers to this usuba.
Mukimono. A small, thin, single-bevel knife for intricate vegetable peeling and carving. Flat like a usuba but much smaller and pointed, so it works as a detail tool for garnish work rather than a general vegetable knife. Highly specialized and rarely a first or second purchase.
Udon kiri. A dedicated noodle knife: a long straight blade with no curve, on a handle mounted so the blade sits well below it, letting the edge come fully down to the board on every cut without the handle striking it. Soba and other regional variants differ mainly in blade-to-handle proportion. Useless for anything but cutting rolled dough.

Western shapes: entries
Chef's knife. The Western general-purpose knife. Compared to a gyuto it typically has more belly, more weight, a thicker stock, softer steel, and a full bolster, all of which support a rocking motion and forgive abuse at the cost of thinness in the cut. German patterns (Wusthof, Zwilling) are the archetype; French patterns are flatter with a more triangular profile. 200 mm and 250 mm are the standard sizes.
Paring knife. A short, in-hand knife for peeling, coring, hulling, and trimming, usually 75 mm to 90 mm. It works off the board as often as on it. Not suited to hard produce like carrots or squash, where the short blade offers no leverage and the tip is easy to snap.
Utility knife. A medium blade, roughly 115 mm to 150 mm, filling the gap between paring and chef's knife. In practice it is the Western equivalent of a petty, and the same tasks apply. Some are sold with serrated edges aimed at tomatoes and citrus, which makes them nearly impossible to resharpen at home.
Bread knife. A long serrated blade for sawing through anything with a hard exterior and a soft interior. The serrations do the work, so the stroke is a draw rather than a press. Offset handles keep knuckles off the board on flat-cut items. Common at 200 mm to 250 mm. Most consumer serrations cannot be practically resharpened, so treat these as replaceable.
Carving and slicing knife. Long, narrow, and much thinner than a chef's knife, for taking uniform slices off roasts and poultry in single strokes. Granton (scalloped) edges create air pockets that reduce drag and stick. Functionally the Western sujihiki, though usually softer steel and thicker. Common at 250 mm to 300 mm.
Boning knife. Narrow, tapered, with a fine point and a semi-flexible blade, meant to follow bone and joint without wasting meat. Flexibility is the main variable: stiff versions handle beef and pork better, flexible ones follow poultry contours more easily. Note that the Japanese equivalents (honesuki, hankotsu) are deliberately stiff, which is a different working philosophy rather than a better one.
Filleting knife. A boning knife with a thinner, longer, and considerably more flexible blade. The flex lets you ride the blade along rib bones and under skin with the blade bent flat against the surface, which is exactly what fish work requires. Too flexible for anything requiring force.
Steak knife. A table knife for cutting cooked protein at the plate, typically 100 mm to 150 mm. Straight-edged versions are more common in Europe, serrated in the United States. Serrated versions hold apparent sharpness for a long time and then have to be replaced, since practical home resharpening is not realistic for most micro-serrations; straight-edged versions can be maintained normally.
Cleaver (meat). A short, very thick, heavy rectangular blade for chopping through bone with blunt force. The edge is intentionally obtuse and the spine is often 4 mm to 8 mm thick. This is the knife people mean when they warn you not to use your chuka bocho on bone, and the two are frequently confused because they look similar from the side. A vegetable cleaver is a different, much thinner tool.
Butcher knife. A long blade with a pronounced upward curve toward a pointed tip, for breaking down primals with drawing and sawing strokes. The curve gives a longer cutting arc per stroke. Granton edges are common to reduce stick on wet meat. Usually 200 mm to 250 mm.
Breaking knife. A butcher knife variant that is narrower, thinner, and more curved, giving more leverage and control when sectioning large cuts and working through skin, cartilage, and small bones. The distinction from a butcher knife is real but modest, and retailers use the terms loosely.
Cheese knife. A category rather than a shape. Designs vary by cheese hardness: holed or perforated blades to reduce sticking on soft cheeses, forked tips for lifting and serving, narrow blades for hard cheeses, and wire cutters for very soft ones. Primarily a service tool.
Tourne knife. Also called a bird's beak paring knife: a short blade, roughly 55 mm to 75 mm, curving downward. The inward curve lets you peel around convex surfaces and odd shapes such as ginger. Named for the tournee cut, a seven-sided football shape used in classical French work for even cooking.
Oyster knife. A short, thick, stout blade with a blunted point, built to pry rather than cut. It is not sharpened like a knife and should not be treated as one. Boston style (longer, narrower blade) is the most forgiving for beginners; other regional patterns suit specific oyster sizes and shells.
Practical notes on overlap
Several of these categories describe the same knife with a different name attached. Gyuto and chef's knife, sujihiki and slicer, nakiri and usuba, petty and utility are pairs separated mainly by construction philosophy: thinner and harder on the Japanese side, thicker and softer on the Western side. Santoku, bunka, and bannou are close enough that anyone shopping one should look at all three.
Where a name genuinely marks a functional difference, it is usually about bevel (single versus double) or stiffness (honesuki versus Western boning knife). Those two axes matter more than the name.

Steels
Steel is the variable people obsess over and the one that explains the least about how a knife cuts. Geometry decides how a blade moves through food. Heat treatment decides whether the steel actually delivers what its datasheet promises. Steel choice sets the ceiling for edge retention, toughness, corrosion resistance, and how the knife behaves on stones, but a well ground and well hardened Shirogami 2 gyuto will out-cut a badly executed powder steel every time. Read this section as a guide to what a steel can do, not as a ranking.
What the numbers mean
Carbon (C). The element that makes hardening possible. More carbon means more hardness available and, past roughly 0.6 percent, more carbide formation. Above what the matrix can dissolve, extra carbon goes into carbides rather than raw hardness.
Carbides. Hard particles of carbon bonded to chromium, vanadium, tungsten, or molybdenum, sitting in a softer steel matrix. Carbides resist abrasion, so they buy edge retention. They are also brittle, and a carbide larger than the apex of your edge is a place where the edge can tear out. This is the central trade-off in knife steel: carbide volume buys wear resistance, carbide size costs toughness and fine-edge stability.
Chromium (Cr). Above roughly 10.5 percent dissolved in the matrix, chromium forms a passive oxide film and the steel is called stainless. The word "dissolved" matters. Chromium locked into chromium carbides is not available to fight corrosion, which is why total chromium percentage alone does not predict rust resistance. MagnaCut is the clearest illustration: under 11 percent chromium, but almost all of it free, so it out-resists steels with much higher totals.
Vanadium (V), tungsten (W), molybdenum (Mo). Strong carbide formers. Vanadium carbides are the hardest of the common ones, which is why high-vanadium steels hold an edge a long time and fight back on anything but diamond or silicon carbide stones. Tungsten is the traditional Japanese route to wear resistance and gives the Blue steels their character. Molybdenum improves hardenability and corrosion resistance.
Cobalt (Co). Does not form carbides. It strengthens the matrix and allows higher hardness at temper, mostly relevant in high-speed steels.
HRC. Rockwell C hardness. Most Japanese kitchen knives land between 60 and 64. Harder generally means better edge retention and a crisper edge, at the cost of chip resistance. HRC is set by heat treatment, not by the steel alone, and the same alloy from two smiths can behave very differently. Published HRC figures from makers are also not independently verified, so treat them as intent rather than measurement.
Ingot versus powder (PM). Conventional ingot steel solidifies slowly, so carbides grow large and can segregate. Powder metallurgy atomizes the molten alloy, then consolidates the powder under heat and pressure, giving small evenly distributed carbides. PM is what makes very high alloy content usable in a thin kitchen edge. It costs more, and it does not make a steel automatically better than a fine-grained ingot steel like Shirogami or AEB-L.
Purity. The Yasugi carbon steels are prized less for their alloy content, which is minimal, than for very low phosphorus and sulfur. Inclusions are crack initiation sites. Low impurity is a large part of why White steel takes such a clean edge.
Construction: monosteel, san mai, honyaki
Most Japanese knives are not made of one steel. A hard core is forge-welded between two softer outer layers, called san mai or awase. The core provides the edge, the cladding provides toughness and cost savings, and the visible difference between the two produces the kasumi (misty) finish on traditional knives. Cladding is usually soft iron (jigane) on carbon knives, or a low-carbon stainless such as SUS410 or SUS430 on stainless-clad knives.
A stainless-clad carbon knife is still a carbon knife. The exposed edge and the whole bevel are reactive. It is less maintenance than a full carbon blade, not no maintenance.
Monosteel blades are a single steel throughout. Honyaki is monosteel differentially hardened, water quenched with a clay coating so the edge is hard and the spine is soft. Honyaki is difficult, has a high failure rate in the shop, and is priced accordingly. Whether it cuts measurably better than a good kasumi knife is disputed. Most of the argument for it is about craft and edge stability at very high hardness rather than a difference you would feel in prep.
Japanese carbon steels (Yasugi Specialty Steel)
The core carbon steels come from the Yasugi works in Shimane prefecture, run by Hitachi Metals until the company was renamed Proterial in 2023. Grades are named for the color of the paper wrapped around the steel bar, not the appearance of the finished blade. All of them rust. All of them will develop a patina, which is stable oxide and is mildly protective.

All Yasugi grades also carry roughly 0.10 to 0.20 percent silicon and 0.20 to 0.30 percent manganese, with phosphorus held at or below 0.025 percent and sulfur at or below 0.004 percent.
Shirogami 2 (White 2). The default traditional carbon steel and the most common in single-bevel knives. Plain iron and carbon with almost nothing else, held to very tight impurity limits. It sharpens faster and more cleanly than anything alloyed, gives immediate feedback on a stone, and takes an extremely fine apex. It gives that edge back faster too. It is reactive, has a shallow hardening depth that demands a fast quench, and rewards a smith who knows what they are doing. If you sharpen weekly and enjoy it, this is the steel.
Shirogami 1 (White 1). Same recipe, more carbon. Slightly harder, slightly better retention, noticeably less forgiving. Common in honyaki and in high-end yanagiba where the maker is chasing the finest possible edge. Chips more readily than White 2 and is less tolerant of heat treatment error, which is why White 2 remains the working chef's choice.
Shirogami 3 (White 3). Lower carbon, tougher, softer, easier for a beginner to sharpen and harder to chip. Sees use in entry knives and in some nakiri and deba. Edge retention is modest. Not common in premium work.
Aogami 2 (Blue 2). White 2 with tungsten and a little chromium added. The tungsten forms carbides that meaningfully extend edge life, at the cost of a slightly less refined apex and a slower, grabbier feel on stones. Chromium improves hardenability, which gives the smith a wider window and makes the steel more forgiving to forge. The most common carbon steel on double-bevel Japanese knives and a reasonable default if you want carbon steel without weekly maintenance.
Aogami 1 (Blue 1). More carbon than Blue 2, more tungsten. Harder, holds longer, chips more. Less common than Blue 2 or Aogami Super, occupying a narrow band between them. Some smiths prefer it for its balance; opinions differ on whether it earns a place next to its neighbors.
Aogami Super. The high end of the Yasugi carbon line: more carbon and tungsten than Blue 1, plus molybdenum and vanadium. It runs 63 to 65 HRC comfortably and has by a clear margin the best edge retention of the traditional carbon steels. The vanadium and tungsten carbides make it slower on natural stones and on soft synthetics, and it is less tolerant of lateral force than Blue 2. Widely used by Takeda, Moritaka, Yoshikane, Kurosaki, and others.
Kigami 2 (Yellow 2). Effectively White steel with looser impurity limits and a lower price. Perfectly usable, and common in inexpensive Tosa and Sanjo work. It will not reach the fineness of White 2 but the practical gap is smaller than the price gap.
SK steel. Japanese industrial carbon steel (SK stands for steel and kougu, meaning tool). Now graded by carbon content as SK85, SK95 and so on, formerly SK4 and SK5. Cheap, tough, easy to sharpen, modest retention. Common in budget knives and in cladding.

SRS13 and SRS15 also carry roughly 1.25 percent tungsten, 0.30 percent manganese, and 0.30 percent silicon (reported). Cobalt Special carries roughly 0.3 percent tungsten (reported). The SRS and Cobalt Special figures come from retailer and enthusiast databases rather than mill datasheets, but the same numbers recur across independent sources, so they are usable with the caveat.
Ginsan (Silver 3). The stainless that behaves like carbon steel. Around 1 percent carbon and 13 to 14.5 percent chromium, with no molybdenum, vanadium, or cobalt, so it forms only chromium carbides and stays fine-grained. On a stone it gives clean, fast feedback and forms a burr that comes off easily, which is why Sakai shops reach for it when a customer wants White 2 handling without the rust. Edge retention is modest by modern standards, roughly comparable to White 2. Common in single-bevel stainless work.
VG-10. The most widely produced Japanese cutlery stainless, from Takefu. Chromium at 15 percent with molybdenum, vanadium, and cobalt added. Good corrosion resistance, decent retention, runs 60 to 62 HRC. It has a reputation among sharpeners for forming a stubborn wire edge and feeling gummy on stones, which is the most frequent complaint about it. Very often used as the core of Damascus-clad production knives from Seki.
AUS-8 and AUS-10 (Aichi). AUS-8 is a modest, forgiving stainless used widely in mid-price knives, often marketed under names like "Inox" or "molybdenum stainless." AUS-10 has roughly the carbon of VG-10 with less chromium, so slightly better retention and slightly less corrosion resistance. Both sharpen easily and neither will impress on edge life.
ZA-18. Aichi's answer to VG-10, with more chromium and molybdenum and no cobalt. Retailers report better edge retention and comparable corrosion resistance, and it runs a bit harder at 61 to 63. Community experience with it is thinner than with VG-10 simply because it is newer, so treat performance claims as commonly reported rather than settled.
SG2 and R2. The standard premium powder stainless. SG2 comes from Takefu, R2 from Kobelco, and the two are close enough in composition and behavior that the trade treats them as interchangeable; whether they are literally the same steel is a common claim but not something the mills confirm. Vanadium and molybdenum carbides in a fine PM structure give strong edge retention at 62 to 64 HRC with genuinely good corrosion resistance. The trade-off is chipping: ground thin, at that hardness, SG2 edges chip on hard contact and the carbides make touch-ups slower than Ginsan or White 2. Diamond or silicon carbide stones help.
SRS13 and SRS15 (Nachi-Fujikoshi). Powder stainless in the same performance class as SG2. Composition is reported as roughly 13 percent chromium, 2.75 molybdenum, 1.5 vanadium, and 1.25 tungsten, with SRS15 at about 1.5 percent carbon and SRS13 at about 1.3. Structurally that is close to a powder D2 with extra molybdenum, vanadium, and tungsten added. SRS15 is the older grade and is reportedly restricted to a small set of licensed makers, with SRS13 developed as the more widely available modification (reported, not confirmed by the mill). Both run 63 to 64 HRC and sharpen more easily than the alloy content suggests. Takeshi Saji is the best-known SRS13 user; Haruyuki-Tsunehisa, formerly Akifusa, is the name attached to SRS15.
ZDP-189. Proterial's extreme powder stainless: roughly 3 percent carbon and 20 percent chromium, hardened to 64 to 67 HRC. Enormous edge retention, and correspondingly hard to sharpen (diamonds are effectively required) and brittle in thin geometry. Also sold as MC66 in some Zwilling knives. Its huge chromium carbide volume means much less free chromium than 20 percent suggests, so it is less rust resistant than the number implies.
Cobalt Special (Takefu). About 1.1 percent carbon and 16 percent chromium, with roughly 1.5 molybdenum, 0.3 vanadium, 0.3 tungsten, and 2.5 cobalt (reported). Worth noting that this is not a powder steel, despite being sold as one by a number of retailers: Takefu describes it as made by a special remelting process that produces uniform composition and fine carbide dispersion. Marketed primarily on corrosion resistance, at 60 to 62 HRC. Seen mostly in Sakai Takayuki lines.
Japanese semi-stainless and high-speed steels
These carry 4 to 13 percent chromium: too much to be called carbon steel, too little free chromium to be reliably stainless. They rust more slowly than White or Blue and still need drying.

SLD. Hitachi's D2-equivalent, originally a tool steel for cutting other steels. High chromium carbide volume gives long edge life and a toothy, aggressive edge that never gets truly refined. Not stainless despite 12 percent chromium, because nearly all of it is tied up in carbides. SLD-Magic is a modified version claimed to improve toughness and grain refinement; the claims come from the maker.
VS1 (Chromax, SKD12). An A2-class semi-stainless. Far lower chromium than SLD, so smaller and fewer carbides, a finer edge, and better toughness at similar hardness. Sharpens more like a carbon steel than SLD does. A quiet favorite among people who want most of carbon steel's feel with a lot less rust anxiety.
HAP40. Powder high-speed steel from Proterial, functionally equivalent to Crucible's Rex 45 and Erasteel's ASP2030. Cobalt lets it run 63 to 66 HRC, and the tungsten, molybdenum, and vanadium carbides give edge retention at the top of anything used in kitchen knives. It will stain and can rust, so it is semi-stainless at best. Sharpening is genuinely difficult without diamond or silicon carbide abrasives. HAP72 is the same idea taken further and is rare.
Western steels used in Japanese-style knives
An increasing number of Japanese makers, and most Western makers of Japanese-style knives, work in these.

AEB-L. Originally a Swedish razor blade stainless, and the reason it matters here is grain size. Low carbon relative to its chromium means very few carbides, so it takes an apex about as fine as a carbon steel while being fully stainless. Excellent toughness for a stainless at 61 to 62 HRC, easy to sharpen on any stone, cheap. Edge retention is modest against high-carbide steels but the edge that it does hold is a very good one. 13C26 is essentially the same alloy; 14C28N and Nitro-V are nitrogen-modified relatives with slightly better corrosion resistance.
CPM MagnaCut. Designed by Larrin Thomas and released by Crucible in 2021, explicitly for knives. The trick is balancing chromium and carbon so that vanadium and niobium take the carbon into their own carbides, leaving chromium free in the matrix. Result: corrosion resistance above most high-chromium stainless steels, with toughness and wear resistance in the class of CruWear and 4V. It is the most credible current answer to the stainless-versus-performance trade-off and has been adopted quickly by Western kitchen makers. Sharpening needs diamond or silicon carbide at higher grits because of the vanadium carbides.
52100. A chromium bearing steel, not stainless, around 1 percent carbon with 1.5 percent chromium. Fine grained, tough, takes a keen edge, and forgiving to forge, which is why so many Western smiths use it. Its reputation varies enormously with the maker: the same alloy produces mediocre and outstanding knives depending on heat treatment. Reactive, so treat it like a carbon steel.
Apex Ultra. A carbon steel developed specifically for handmade knives, alloyed with tungsten and vanadium and made to very high purity. The maker's claim is the best toughness of any knife steel tested above 66 HRC, along with strong edge retention, with forging behavior similar to 52100. It is a young steel and the independent data is still thin, so treat performance claims as maker-reported. Adoption among Western kitchen smiths has been fast.
1.2519 and 26C3. German and Swedish carbon steels that have found a home in Japanese-style knives. 1.2519 is close in spirit to Blue steel, with tungsten for wear resistance. 26C3 is a very clean, very simple high-carbon steel that behaves much like White 1 and hardens deeply.
X50CrMoV15 and 1.4116. The German production stainless steels, around 0.5 percent carbon, run soft at 55 to 58 HRC. Corrosion resistant, tough, easy to sharpen, and unable to hold a fine edge for long. This is what most European factory knives are made of. Not a Japanese-style steel, included because it is the baseline most people are comparing against.
Tamahagane
Tamahagane is steel smelted in a traditional clay tatara furnace from iron sand, rather than produced in a modern mill. It is the historical material of Japanese swords, and it survives in kitchen cutlery only as a specialty: composition is inconsistent by nature, the smelt is labour-intensive, and the smith has to sort usable pieces by eye. Knives made from it are bought for provenance and craft rather than measurable performance.
Tanabe Tatara is the operation most often behind tamahagane kitchen knives. The Tabe family traces steelmaking to 1460, and the 25th-generation Tabe Chouemon restarted tatara smelting in 2016. They run two smelts a year and supply the steel to established smiths rather than forging knives themselves; one documented example is a blade forged by Yoshikazu Tanaka and ground by Masaya Shimizu in Sakai. Because knives are usually marketed under the Tanabe name, buyers reasonably but wrongly assume it is a forge.
Choosing
There is no best steel, only a set of positions on the same three-way trade-off between edge retention, toughness, and corrosion resistance. A few honest starting points:
- Learning to sharpen, want carbon: Shirogami 2 or Aogami 2.
- Learning to sharpen, want stainless: Ginsan or AEB-L.
- Least maintenance with good performance: MagnaCut, SG2, or Ginsan.
- Maximum edge life, willing to buy diamond stones: HAP40, ZDP-189, or SG2.
- Maximum edge fineness, willing to maintain it: Shirogami 1 or 2, or a good 26C3.
The consistent argument from experienced users, and one worth taking seriously, is that on a home kitchen board the difference between a well-executed AEB-L or White 2 knife and a super steel knife shows up mostly on the sharpening bench rather than in the food. Buy the maker and the grind first.

Grinds and Heat Treatment
Steel gets most of the attention and deserves the least of it. Two knives cut from the same bar of the same steel can behave nothing alike, because the grind decides how the blade moves through food and the heat treatment decides what the edge does once it gets there. Everything below assumes the same rule that governs the rest of this guide: it is all compromise.
Grinds
A grind is the geometry of the blade from spine to edge. The edge angle determines how easily the knife starts a cut. The grind determines everything that happens after that, as the rest of the blade has to follow the edge through the food.
This is why a knife can shave arm hair and still fail on an onion. The edge penetrates, then the shoulders of the blade have to displace the two halves. If there is too much steel too close to the edge, the blade stops cutting and starts splitting, which is wedging. Thin behind the edge, usually measured a few millimetres up from the apex, matters more than the edge angle itself and more than the spine thickness people quote.
Thin behind the edge. The single most useful number nobody publishes. A blade can have a thick spine and still cut beautifully if the taper down to the edge is well managed, and a thin spine can wedge badly if the last few millimetres are abrupt. Choil shots (a photograph looking straight down the blade at the heel) are the standard community workaround for seeing this before buying. A retailer that posts choil shots is telling you something.
Distal taper. Thinning of the spine from heel to tip. It moves weight back toward the hand, makes the tip more delicate and more precise, and is a fair proxy for how much hand work went into the blade. Sakai knives are commonly described as having pronounced distal taper, Echizen knives as having little or none.
Food release. Whether the slices fall away or stick to the blade. Release comes mostly from geometry, with finish and the food itself contributing. Broadly, geometry that releases well is geometry with some convexity or relief near the edge, and it tends to wedge slightly more. Blades that are flat and slick are gentler entering the food and worse at letting go of it. Opinions differ on how much of release comes from finish versus grind.
Full flat. A straight taper from spine (or from the shinogi) down to the edge. The most common kitchen geometry, an honest all-rounder, and the easiest to keep in shape over years of sharpening. Tends toward suction on starchy foods.
Convex. The faces bow outward toward the edge. Puts more steel behind the edge, so the edge is better supported, and the outward curve pushes food away, so release is usually better. The cost is more wedging in dense produce and a grind that is harder to thin correctly on stones. Common in kitchen knives described as workhorses. Note that some general knife literature calls convex useful only in axes and choppers, which does not reflect kitchen practice.
Hollow / concave. The faces are ground with a curve inward, traditionally on a large wheel. Removes material high on the blade, which reduces drag and helps release, and it keeps the blade from thickening as fast as it is sharpened down. Less steel supporting the edge. Common in Echizen work.
S-grind (compound). A hollow high on the blade transitioning into convexity near the edge. The aim is release from the hollow plus edge support and stiffness from the convex portion. Achieved by grinding on a large radius platen or wheel, or hammered in during forging. Expensive to execute well and mostly seen from individual makers.
Wide bevel (saber). The primary grind starts partway down the blade rather than at the spine, leaving a visible transition line (the shinogi on Japanese knives). Leaves stock high on the blade for stiffness and gives a distinct, often very good cutting feel. Wide bevels take real effort to maintain: as the knife is sharpened and thinned, the bevel must be reset or the knife slowly gets thicker behind the edge.
Single bevel (chisel). Ground on one side only, with a hollowed back (urasuki) on traditional Japanese single bevels. Steers into the cut, which is the point for yanagiba and usuba work where you want the slice to fall clean away. Handed, so left-handed versions must be ordered as such, and sharpening is a genuinely separate skill.
Asymmetry. Many double-bevel Japanese knives are deliberately asymmetric, commonly described in ratios such as 70/30. The intent is steering and release. The risk is the owner sharpening both sides evenly and quietly erasing the geometry the maker built.

Heat Treatment
Heat treatment is the sequence of controlled heating and cooling that turns a soft, workable bar into hardened blade steel. It sets hardness, toughness, grain size and, indirectly, how fine an edge the steel will take and hold. It is the part of a knife you cannot inspect, cannot verify from a spec sheet, and cannot fix afterward.
The sequence. In outline, most blades go through some or all of the following.

Two variables inside that sequence account for most of the difference between a good heat treat and a mediocre one. Soak temperature and time control how much carbon goes into solution and how much grain growth occurs. Too cold or too short and the steel never reaches its potential; too hot or too long and the grain coarsens, which costs toughness and edge stability. Quench speed has to suit the steel: shirogami and other low-alloy carbon steels need a fast quench (water for some, which is why water-quenched blades warp and crack at a high rate), while high-alloy and powder steels harden in oil, plates or air.
Retained austenite. Not all austenite converts to martensite in the quench. What remains is softer, can transform later under stress, and is generally unwanted at the edge. Sub-zero or cryogenic treatment converts it. For several high-chromium stainless steels this step is effectively required to hit rated hardness.
Hardness and toughness. The core trade-off. Higher hardness generally buys better edge retention and the ability to hold a thinner, keener edge; it costs toughness, meaning resistance to chipping. HRC is a real measurement but a poor summary: 62 HRC on well-managed fine grain behaves very differently from 62 HRC with coarse grain and leftover retained austenite. A blade can be both hard and reasonably tough, and that combination is what good heat treatment is buying.
Grain size. Finer prior austenite grain improves toughness at a given hardness, which is why forging practice, normalizing cycles and controlled soaks matter and why some smiths are worth seeking out for a plain steel. This is the mechanism behind the common enthusiast claim that a good maker's 52100 or white #2 outperforms a mediocre maker's powder steel.
Cladding. Most Japanese kitchen knives are laminated: a hard core steel (hagane) with softer jacket steel (jigane) forge welded to it. San mai has the softer layers welded to both faces; warikomi has the jacket split and the core inserted, so the soft steel also wraps the spine. Cladding lets a maker run a very hard, brittle core without the whole blade being brittle, makes the knife easier to sharpen and thin, and can be soft iron (reactive, patinas, prized for how it feels on stones) or stainless (lower maintenance). The core is doing the cutting.
Differential hardening (honyaki). A monosteel blade quenched so that the edge hardens fully while the spine does not, traditionally by coating the spine in a thicker layer of clay before the quench. The result is a hard edge with a softer, more forgiving spine and a visible hamon line high on the blade. Mizu (water quenched) honyaki has a high failure rate in the shop, which is a large part of why these knives are what they are. Whether honyaki cuts measurably better than an equivalent clad blade is contested; the craftsmanship and the finish are not.
Terminology warning: kasumi is used both for clad construction and for the misty polish that clad knives take, and usage varies by shop. A lamination line sits low on the blade near the edge; a hamon sits high, near the spine. That is the reliable way to tell them apart.
What you can actually do with this. Very little, directly, which is the honest answer. Heat treatment is invisible, so in practice enthusiasts buy the maker rather than the spec. Track smiths whose blades hold up, treat HRC figures as one data point among several, and treat a spec sheet listing an impressive steel with no information about the maker as telling you nothing about performance.

Construction and Finishes
Two different things get talked about as if they were one. Construction is how the blade is put together: one piece of steel, or a hard core wrapped in something softer. It affects performance, maintenance, and price. Finish is what was done to the outside surface afterwards. It is mostly cosmetic, with small effects on food release and rust.
Retailers mix the two constantly. A listing that says "kurouchi san mai aogami 2" is telling you the finish, the construction, and the core steel, in that order, but plenty of listings only give you one of the three.
Construction
How a clad knife works
Most Japanese kitchen knives are laminated: a hard, high carbon core steel (hagane) is forge welded inside softer outer layers (jigane, traditionally soft iron). Only the core reaches the edge. Everything else is structure.
The reasons are practical and old. Hard steel at 61 to 64 HRC holds an edge but is brittle and expensive. Soft cladding absorbs impact and flex, so the blade can be ground very thin without shattering, and it uses less of the costly core steel. It also grinds and sharpens faster, which matters when you eventually thin the knife behind the edge.
The practical consequences for you:
- The core steel determines cutting performance and edge retention. The cladding does not. If a knife lists a Blue #2 core, that is the steel doing the work regardless of how pretty the outside is.
- The cladding determines maintenance. A carbon core in stainless cladding only rusts at the edge. A carbon core in iron cladding will patina and react across the whole blade face.
- Cladding affects sharpening and thinning. Soft iron abrades quickly and polishes nicely on natural stones. Stainless cladding is stiffer, gummier on stones, and harder to bring to a clean finish.
- Construction type matters less than most people expect. Between san mai and warikomi, at the same steel and geometry, the difference is negligible. Honyaki versus clad is a real difference, but more in behavior and price than in raw cutting.
One warning about terminology. Kasumi strictly means "mist" and describes a polish, the hazy soft cladding sitting next to the brighter core. Japanese wholesalers also use "kasumi" and "hon-kasumi" as product grades for laminated single bevel knives, so the word gets used to mean construction, finish, and quality tier depending on who is talking. Read it from context, and expect disagreement in the community about which use is correct.
Construction types
Honyaki A single bar of steel, no cladding, differentially hardened so the edge is hard and the spine stays softer and more shock absorbent. Clay is applied before quenching, leaving a visible transition line (hamon) after polishing. Water quenched (mizu honyaki) is the harder version to execute; oil quenched (abura honyaki) is more forgiving. Failure rates in forging are high and few smiths make them in volume, which is most of the reason for the price. Honyaki are stiff, hold an edge well, and are unforgiving: no soft cladding to absorb a bad lateral hit, and the whole blade is reactive if it is carbon. Western usage often calls any mono-steel blade honyaki, which is not what the term means.
Mono-steel (non-honyaki) One piece of steel with no cladding and no differential hardening. Common in machine-made stainless knives and in some rustic carbon knives. Tough and simple, usually run at lower hardness, so expect to sharpen more often but worry less about chipping. Sometimes called zenko, though the term is rarely seen on Western listings.
San mai Three layers: a full sheet of core steel with cladding on both sides. The everyday construction for double bevel knives, from entry level stainless up to high end handmade. Core steel is commonly visible as a stripe at the spine and along the blade road. Nothing exotic about it, and that is the point.
Warikomi The cladding is split and the core steel inserted into it, then forge welded, so the cladding wraps around the spine. Functionally very close to san mai; the usual visual tell is that the core is not exposed at the spine (commonly reported, and not reliable across all makers). Some makers and regions use the term for what others would just call san mai.
Ni mai Two layers: hard steel on one side, soft on the other. Used for traditional single bevel knives (yanagiba, deba, usuba), where the bevel is ground on one face only. The soft back side is what allows the hollow (urasuki) to be maintained.
Damascus (suminagashi, kitaeji) Pattern welded cladding over a conventional core. The layers are cosmetic; they do not reach the edge and do not make the knife cut better. Most production damascus uses pre-laminated stock bought from a steel mill and is acid etched to bring out the contrast. Kitaeji generally implies the smith forged and folded the pattern in-house, Shigefusa being the usual example, though usage is loose and opinions differ on where the line sits. Layer count is a marketing number, not a performance figure.
Coreless Layered the whole way through with no distinct core, so the pattern runs to the edge. Rare, more of a maker's showpiece than a category, and performance depends entirely on which steels went into the stack.

Cladding materials
Soft iron (jigane) The traditional choice. Reactive: it discolors, takes patina, and can throw off-flavors or gray onions and other sulfurous or acidic foods until a patina forms. It is soft, so thinning and polishing go quickly and it responds beautifully to natural stones, which is why kasumi contrast is possible at all. Requires wiping and drying like any carbon knife, and gives you a knife that visibly ages.
Stainless cladding A stainless outer layer over a carbon or stainless core. The flats stay clean and the maintenance burden drops to just the exposed edge, which still needs drying if the core is carbon. Stiffer than iron cladding, harder to grind, and it does not polish or contrast as nicely. Commonly reported as more difficult to forge weld, which is part of why it shows up more on modern and production-oriented knives.
Damascus cladding Either of the above, pattern welded and usually etched. Choose it for looks. Some claim a toughness benefit from mixed layers absorbing shock differently; if the effect exists it is small enough that few people can identify it in use.
Finishes
A finish is surface treatment on the blade faces, mostly above the blade road. Textured finishes give a small amount of food release and a bit of grip under a pinch grip; they also give moisture more places to sit, so a textured stainless knife still wants drying. Polished finishes reduce drag when slicing and show every scratch. None of it changes how the knife cuts in any large way, and none of it protects a carbon knife from neglect.
Finishes also wear. Sharpening and thinning eat into the blade road first, so kurouchi retreats and kasumi contrast has to be re-established on stones. This is normal, not damage.
Kurouchi Black forge scale left on the blade from forging and heat treatment, sometimes deepened with dye. The most rustic look, and the cheapest to produce since it skips polishing. It wears unevenly with use and hand contact, which enthusiasts either love or dislike depending on how they feel about wabi-sabi. The scale layer is a mild moisture barrier over iron cladding, and it hides jigane that was never finished to a high standard.
Nashiji "Pear skin," a fine mottled texture. On forged knives it comes from polishing back the forge scale and leaving the rough surface underneath. The term is also applied to a manufactured surface on some production stainless knives, and accounts differ on how those are made; treat any specific process claim with suspicion unless the maker states it. Slight food release, slight extra rust risk in the texture.
Tsuchime Hammer marks struck into the blade face, sometimes with custom hammers for a signature pattern. The dimples break suction against wet food, so food release is real but modest, and they add grip. Same trade-off as any texture: more surface for moisture, and the cladding can rust if the knife is left wet.
Migaki Buffed and polished to a consistent surface, short of a mirror. The default finish on a large share of knives, ranging from cloudy matte to nearly mirrored depending on how much work the maker puts in. Clean and low drag. Scratches show.
Kasumi A contrast polish rather than a texture: the soft cladding is left hazy while the core steel is brought bright, so the lamination line reads clearly. Traditional on single bevel knives and produced properly on natural stones. Requires good jigane to look good, which is why it is a marker of a well-finished knife, and why the term drifted into use as a quality grade.
Mirror (kagami) Progressive polishing through fine grits until the surface is fully reflective. The most labor intensive finish and the least practical: it scratches from ordinary use, wiping, and storage, and restoring it is a long job. Lowest drag of any finish, so it suits long slicers like yanagiba and sujihiki. Food sticks more to polished surfaces than textured ones, especially starchy vegetables.
Etched damascus Acid etching to darken alternating layers and make the pattern pop. Standard on production damascus. The etch is shallow and can fade with polishing and use.

Finishes combine freely. A kurouchi damascus, or a nashiji face with a migaki blade road, is common.

Handles
The handle is half of how a knife feels. It sets balance, decides how many grips are available to you, and determines whether the knife can be refreshed in ten years or has to be lived with as-is. Most of what follows is preference, but the mechanics behind the preference are worth knowing.
Construction
Every kitchen knife handle is a solution to one problem: how to attach a piece of steel to something you can hold. Two answers dominate Japanese cutlery.
Wa (hidden tang). The blade ends in a narrow tapered tang (nakago) that does not extend to the full width or length of the handle. A block of wood is bored, usually with a mortise burned or drilled to match the tang taper, and a ferrule is fitted at the front to reinforce the wood against the wedging force of the tang. The tang is then driven home, traditionally heated so the burned socket matches it exactly. Friction does most of the work, though many modern makers and retailers add epoxy. There are no rivets and no visible fasteners.
Yo (full tang, Western). The tang is cut to the outline of the handle and runs its full length. Two scales are fastened to either side, typically with three rivets on modern kitchen knives (two on parings and minimalist designs, five on heavier German-style knives with a full bolster). The scales and tang are then ground flush and shaped together. Some production knives use an encapsulated tang instead, where the handle material is molded around the steel with no exposed metal or rivets.
What that difference does.
- Weight and balance. A wa handle is usually much lighter, which pushes the balance point forward toward the heel or the pinch. A yo handle adds mass behind the hand and often a bolster in front of it, so the same blade balances further back. Neither is better. It is a question of whether you want to feel the blade or feel the knife.
- Grip positions. Yo handles are contoured, which is comfortable but prescriptive: most allow one or two viable hand positions. A wa handle is essentially a shaped stick, which is less ergonomic in the strict sense but tolerates many more positions, including choking well forward or riding back for leverage.
- Repairability. This is the practical argument for wa. A wa handle can be knocked off and replaced with basic tools, and the original often survives the removal intact. Replacing yo scales means drilling out rivets, fitting new scales, and re-riveting, which is a real shop job. If you like the idea of rehandling a knife later, buy wa.
- Sanitation and durability. Yo construction with synthetic scales tolerates commercial dish pits, heat, and neglect. Bare wood wa handles do not.
Why Japanese makers build both. After WWII, Japanese production was rebuilt heavily around export, and Western buyers at the time wanted full-tang riveted knives. Japanese factories made them, and the style then took hold domestically as well. Western taste has since swung back toward the traditional-looking wa handle, so the modern market runs in both directions: wa handles sold largely to enthusiasts abroad, yo handles common in Japanese professional and home kitchens. Seki and Tsubame-Sanjo in particular build Japanese blade geometry onto Western handles for export.
Wa handle shapes
Shape is grip preference, not performance ranking. Note that most "octagonal" handles are not regular octagons: the side facets are usually taller than the top and bottom, which quietly orients the blade square to the board.

Octagonal. Eight flats, symmetric side to side, and the most common shape on modern double-bevel Japanese knives. The facets let your fingers find blade orientation without looking, and they resist rotation in a loose grip. Slightly less forgiving than oval if you hold the handle very tightly for long sessions, since the edges of the facets become contact points.
D-shape. Asymmetric by design, with a spine ridge that sits against the base of the index finger of the dominant hand. It shines on single-bevel knives where blade orientation is fixed for the whole stroke, which is why it is standard on yanagiba and deba. A right-handed D on a left-handed cook is genuinely uncomfortable, so check handedness before buying.
Oval and round. Neutral shapes with no orientation cue. Oval is the more refined of the two and is often described as the most comfortable in a relaxed grip. Round is the plainest option, easy to produce, and completely indifferent to how you hold it.
Yo handle features
Bolster. A thicker collar of steel or other material between blade and handle. It adds mass behind the heel, protects the fingers, and reinforces the junction. A full bolster that wraps the heel makes sharpening the last few millimetres of the edge awkward over time and is a common complaint on German-style knives; a half bolster or no bolster avoids it.
Rivets. Usually three on a modern kitchen knife. Rivet count correlates more with style and scale thickness than with strength. Mosaic and decorative rivets are cosmetic. Rivets can back out slightly on heavily used knives, which shows up as a rough spot under the palm.
Encapsulated and molded handles. The material is formed around the tang with no seams or rivets. Very easy to clean and common on food-service knives. Effectively unrepairable.

Ho wood. The default wa handle wood on most production Japanese knives: pale, very light, straight-grained, and cheap enough that makers treat it as a consumable. It absorbs oil readily and is easy to shape, which is why entry-level knives ship with it and why rehandling a ho-handled knife is a common first upgrade. It is not durable. Expect it to darken, dent, and eventually loosen at the ferrule with daily use.
Ebony and rosewood. Dense tropical hardwoods used on mid and upper-tier wa handles, usually paired with a buffalo horn ferrule. Both are far more dent-resistant than ho and add noticeable mass at the back of the knife, which pulls the balance point rearward. Ebony is the harder and darker of the two. Sourcing on both is increasingly restricted, so substitutions are common.
Stabilized wood and burl. Natural wood impregnated with resin under vacuum and pressure. It keeps the grain and figure of the original wood while becoming dimensionally stable and effectively waterproof. This is the standard material for custom wa handles and premium yo scales. Heavier than untreated wood of the same species.
Pakkawood. Layered hardwood veneers compressed with resin. Non-porous, dimensionally stable, inexpensive, and the most common handle material on mass-market Japanese knives sold abroad. It looks like wood at a distance and does not behave like it, for better and worse. Chips rather than dents if dropped on tile.
Micarta and G10. Both are resin laminates: micarta uses linen, canvas, or paper, G10 uses woven fiberglass. Micarta develops a slightly warm, grippier surface with use and is the more common of the two on kitchen knives. G10 is harder, lighter, and close to indestructible, but can feel cold and plasticky. Both grip well wet or greasy and both are unaffected by water. Micarta can delaminate at a rivet edge after many years of hard use (reported, not common).
Plastics and metal. POM and reinforced nylon are the workhorse materials of commercial food service: cheap, hygienic, dishwasher-tolerant, and unremarkable in the hand. All-stainless handles are hygienic and durable but heavy, slippery when wet unless textured, and unpleasant to hold at temperature extremes.
Ferrules. The collar at the front of a wa handle, whose real job is keeping the wood from splitting when the tang wedges in. Buffalo horn is traditional and the mark of a better handle, though it can dry and crack if soaked or stored hot. Plastic ferrules are standard on budget knives and are functionally fine. Decorative spacers of horn, resin, or metal between ferrule and body are cosmetic.
Fit and sizing
There is no standard. As rough orientation, wa handles on 210 to 240 mm gyuto usually run somewhere around 115 to 135 mm long, with the taller cross-section dimension in the low 20s of millimetres, but this varies widely by maker and is worth checking against a handle you already like rather than against a number.
What actually matters:
- Hand size and grip. If you pinch grip, the handle mostly stabilizes and steers, so a slim handle is fine. If you hold back on the handle, girth and shape matter far more.
- Length. Too short and the butt digs into the palm in a rearward grip. Too long and it catches your forearm on tall knives.
- Balance. Handle weight is the easiest lever for moving a knife's balance point. A heavy ebony or resin handle can turn a blade-forward knife into a neutral one, and a light ho handle does the reverse.
Care and rehandling
Bare wood handles: wash quickly, dry immediately with the same towel as the blade, never soak, never put in a dishwasher. Every few months, wipe on a small amount of food-safe mineral or camellia oil if the wood looks dry. Heat and steam are what loosen ferrules and open cracks. Synthetic and stabilized handles need none of this.
Rehandling is one of the reasons people commit to wa. A worn ho handle can be replaced with a custom in stabilized burl, ebony, or micarta for a fraction of the cost of a new knife, and it changes the balance and feel more than most people expect. Removal usually involves heating the tang gently and tapping the handle off, and the original often survives. Yo scales can also be replaced but the process destroys the old scales and requires drilling and re-riveting.
Choosing
- Cook in a busy or commercial kitchen, or hate maintenance: yo with synthetic scales, or wa in pakkawood or stabilized wood.
- Want the blade to feel light and forward, and like the idea of changing handles later: wa.
- Right-handed and buying a single-bevel knife: D-shape is the traditional and usually the better answer.
- Left-handed: avoid D-shape unless it is specifically made left-handed. Octagonal and oval are ambidextrous.
- Unsure: octagonal wa in stabilized wood or micarta is the least likely choice to regret.

Sakai Smiths
Two things define a Sakai knife before you get to any individual smith. The first is geometry: the region's house style runs light and thin, with real distal taper from heel to tip, a shallow convex or flat grind, and soft iron cladding on most carbon work. The second is finish, which is generally the most refined of the four regions. If a knife feels precise and slightly delicate in the hand, Sakai is the usual answer.
One buying note that catches people out: Sakai length is conventionally measured from the machi, the step where the blade meets the tang. A Sakai knife therefore carries roughly 10 to 15 mm less usable edge than the same nominal size from Sanjo or Echizen. Compare across regions accordingly.
The other structural fact about Sakai is the division of labor. Forging, sharpening, and handle fitting are separate trades handled by separate craftsmen, then assembled and sold under a house name. A Sakai knife is usually a smith plus a togishi plus a house, which is why the same smith's steel turns up under a dozen different brands. Working Smiths
Ashi Hamono (Hiroshi Ashi) Established in Sakai in 1948 and headed by Hiroshi Ashi. Unusual among Sakai workshops in two ways: it produces entirely in house rather than farming out sharpening, and it builds monosteel blades (zenkou construction) rather than clad ones. The Ginga line is the reference point for the Sakai laser, thin and precise in both carbon and stainless. If you want to know what people mean by a thin Sakai grind, this is the archetype. The trade-off is the usual laser trade-off: excellent food separation and effortless push cutting, but little heft for hard produce and less margin for careless technique. Ashi also does the sharpening on its own blades, which is why the line is unusually consistent unit to unit. Ashi is commonly reported to have forged some Konosuke Fujiyama honyaki, though the Fujiyama attribution history is contested.
Itsuo Doi Son of Keijiro Doi, who was one of the most influential Sakai smiths of the last century. Itsuo began apprenticing under his father at 24 and has now been forging for more than 40 years. He is the head blacksmith at Sakai Takayuki, which built him his own workshop, and his work appears in the Homura, Genbu, and Guren lines. His calling card is Aogami 2 worked with his father's low-temperature forging method and finished with the classic Doi polish. Community consensus is that his Blue 2 has very few peers for edge feel and ease of sharpening. Sources describe him as involved in both forging and sharpening, though he is documented more clearly as a forger. He has said he will be the last of the family to make knives.
Kenji Togashi One of the small number of Japanese smiths with the skill to forge honyaki consistently well, and generally described as a master of the Sakai forge. He works with his three sons and forges mainly for Sakai Takayuki, with some work reaching Hitohira. He holds Dentokogeishi (Master of Traditional Crafts) status and has received the Order of the Sacred Treasure. His workshop includes an in-house sharpener, reported to be his son Kenya Togashi, which is unusual in Sakai's split-trade system and gives the Togashi lines an unusually consistent forge-to-edge signature. Expect traditional single bevels and mirror-polished honyaki with a visible hamon rather than modern stainless work.
Mizuno Tanrenjo Founded in 1872 by mastersmith Torakichi Mizuno and still family run, with the third, fourth, and fifth generations (Akiharu, Yasuyuki, and Jyun Mizuno) documented. The workshop forges Japanese swords alongside kitchen knives, and its kitchen output is best known for traditional Sakai-uchi wa-bocho. The second generation, Masanori Mizuno, was commissioned to forge the Mayokegama sickle for Horyuji Temple, and imperial visits to the workshop in 1952 and 1980 are commemorated by the 賜台覧 mark engraved on blades. This is a heritage forge rather than a modern-steel one: single bevels, classic carbon steels, and traditional shapes. Unlike most Sakai smiths, Mizuno sells largely under its own name rather than through houses.
Satoshi Nakagawa (Nakagawa Hamono) Trained under Kenichi Shiraki at Shiraki Hamono for 16 years as his only apprentice, then took over when Shiraki retired and closed the shop; Nakagawa launched under his own name in April 2021. He specializes in wide-bevel work and forges honyaki, and he is one of the few Sakai smiths comfortable in stainless (Ginsan and VG10) as well as the carbon steels. The reputation rests on heat control during forging and thorough heat treatment: good edge formation, long edge life, and carbon steels that stay easy to sharpen. His steel appears under Hitohira, Hatsukokoro, Sakai Takayuki, and Sakai Kikumori among others. Opinions differ on where he sits relative to the older masters, but the common read is that he is the most versatile smith of the current generation.
Yasuhiro Hirakawa (Sasuke) A fifth-generation Sakai blacksmith whose primary business is scissors, with kitchen knives made alongside them and priced well below the region's marquee names. He is known for welcoming visitors into the workshop. This entry rests almost entirely on visitor reports rather than maker or retailer documentation, so treat the generation count and the details of his knife work as reported, not confirmed.
Yoshikazu Ikeda (Ikeda Tanrenjo, Sakai Hokushin) Born 1946, kanji 池田美和, and by common agreement the most celebrated living smith in Sakai. He began in 1967 as an apprentice to his father Kameo Ikeda, second generation of the family forge, and founded his own workshop, Ikeda Tanrenjo, in 1983 after his elder brother Tatsuo took over the family shop. He is the current chairman of the Sakai traditional craftsmen's association. The Ikeda brothers are the honyaki reference in Sakai and are credited with pioneering the region's signature wave and Mount Fuji hamon. Now approaching 80, he is still producing honyaki in a wide range of carbon steels. His work is sold under his own Sakai Hokushin line and he is the principal smith behind Yoshihiro and Ninohi. Traditional single bevels and honyaki rather than stainless.
Yoshikazu Tanaka More than 50 years at the forge, certified a Sakai Master Craftsman in 1996, and working alongside family (sources disagree on two sons versus a son and an apprentice). The technical signature is old-method heat treatment executed well: pine charcoal quenching, quench timing judged by eye rather than instrument, a tempering kiln, and output deliberately capped at roughly 30 knives a day. The result is heat treatment that community consensus rates among the best in Sakai, particularly in Hitachi carbon steels. He forges for Hado, Kagekiyo, Sakai Kikumori, Hitohira, Konosuke, and Sakai Takayuki, and he is the smith behind the clad Konosuke Fujiyama knives. One source reports he may retire soon (reported, not confirmed).
Retired and Historical
Kenichi Shiraki (Shiraki Hamono) Kanji 白木健一. One of Sakai's most revered smiths and a specialist in honyaki, including mizu-honyaki, the water-quenched version that is the hardest thing a Japanese smith is routinely asked to do. He retired and closed the workshop in 2020, handing the business to his only apprentice, Satoshi Nakagawa. His blades are out of production and now trade at collector prices. He matters here for two reasons: the Nakagawa lineage runs directly through him, and he is one of the smiths commonly named behind Konosuke Fujiyama honyaki, though that attribution is community reporting rather than confirmed.
Tatsuo Ikeda Elder brother of Yoshikazu Ikeda and third-generation head of the family forge, which the first-generation Tatsuzo Ikeda established in Sakai in 1888. Tatsuo entered the trade in 1954, succeeded to the workshop in 1975, and was recognized as a Traditional Craftsman (Dentokogeishi) in 1985. Like his brother he is best known for honyaki, and the two of them together are the reason Sakai honyaki has the reputation it does. He has passed away and his blades are collector items rather than working purchases, but his name appears often enough in older listings and forum threads that it is worth knowing whose work it is.

Echizen (Takefu) Smiths
Echizen City, Fukui Prefecture. One of the three centres usually named alongside Sakai and Seki, and the one most associated with double-bevel kitchen knives sold under the maker's own name rather than under a wholesaler's.
About the region
Echizen blade-making is conventionally dated to 1337, when the Kyoto swordsmith Chiyozuru Kuniyasu settled in what is now Echizen City (historically Takefu) and began forging sickles for local farmers alongside swords. The area became a major producer of agricultural tools, and Edo-period records list Fuchu (Takefu) sickles and nata among regional products. In 1979 Echizen Uchihamono became the first cutlery craft in Japan to receive national Traditional Craft designation.
Two names cause confusion. "Echizen" is the province and the modern city; "Takefu" is the older name for the town at its centre, and both are still used interchangeably on maker pages and retailer listings. A knife marked Echizen and a knife marked Takefu are from the same place.
The modern reputation of the region rests heavily on one institution. In the 1970s Echizen smiths faced aging workers, few successors, falling demand for hand-forged farm tools, and competition from stamped stainless. In 1973 a group of younger craftsmen formed the Takefu Forged Blade Industry Study Society. Founding members are usually listed as Katsuyasu Kamo, Katsushige Anryu, Hideo Kitaoka, Hiroshi Kato, Haruji Totani, Masanobu Okada, Shiro Kamo, Takeshi Saji, Kazuyoshi Honda, and the late Masami Azai. In 1982 they began working with industrial designer Kazuo Kawasaki, a local, on a unified brand and a modern product line; a first collection of 17 items was exhibited in Tokyo in 1983. In May 1993 the physical cooperative facility, Takefu Knife Village, was completed, designed by architect Kiko Mozuna. The smiths financed it themselves without subsidy.
What that produced is a shared-facility model rather than the Sakai division of labour. In Sakai, forging, sharpening, and handle-fitting are typically done by three separate specialists coordinated by a wholesaler. In Echizen, individual workshops keep their own names and usually handle forging and grinding in-house or within the cooperative, and sell under the smith's own name. This is the main structural reason Echizen names are so recognisable to Western buyers: you are usually buying "a Kurosaki" or "an Anryu," not "a Konosuke."
Two further consequences follow. First, apprenticeship lines here are unusually legible, and most of the current generation trace back to a small number of founders (Hiroshi Kato and Katsushige Anryu especially). Second, Echizen adopted modern steels early and enthusiastically. VG-10, SG2/R2, and Aogami Super are all common, and several workshops built their reputations on hand-forging powdered stainless, which is technically awkward and not widely attempted elsewhere. Traditional carbon single-bevel work continues, but it is a minority speciality within the region.

Hiroshi Kato Founder-generation figure and, indirectly, the reason a lot of the current Echizen roster exists. He ran the family workshop, Kanehiro Uchi Hamono (Kato Knife Manufacturing), in Takefu and is listed among the roughly ten smiths who founded the cooperative completed in 1993. One retailer source says he became the fourth chairman of Takefu Knife Village in 1994 (single-source, not corroborated). He was awarded the Order of the Sacred Treasure, Silver Rays, in 1987. His apprentices include Yu Kurosaki, Makoto Kurosaki, and Toru Tamura, which is an unusually strong teaching record for one forge. Sources disagree on whether his successor Yoshimi Kato is his son or son-in-law; "son-in-law" is the more commonly cited version and appears in a first-person quote attributed to Yoshimi, but the conflict is unresolved. He handed the forge over gradually around 2017 to 2018 and is no longer forging.
Yoshimi Kato Successor to Hiroshi Kato and now the smith behind the Kanehiro and Kintaro lines, as well as several Masakage series. He came to the trade late, having previously worked as a project manager in construction, and learned through apprenticeship rather than growing up in the forge. He is best known internationally for SG2 (R2) work, particularly the black damascus finish, and for consistent heat treatment across a wide range of steels: VG-10, Shirogami, Aogami Super, and powdered stainless all appear in his output. The knives are cleanly finished, thin behind the edge, and aimed squarely at working cooks rather than collectors. Everyday-user reputation is strong; there is no cult of scarcity around them the way there is around some Sanjo makers.
Kanehiro Uchi Hamono The Kato family workshop entity, as distinct from the individual smiths. Founder is given as Kintaro Kato, and the workshop trades as Kanehiro and Kintaro. Founding dates conflict across sources and are worth flagging rather than resolving: one account gives family knife production starting 1928 with the company formally founded in 1958, another dates the firm to 1948. All accounts agree on the generational chain of Kintaro to Hiroshi to Yoshimi. The workshop operates within Takefu Knife Village and supplies knives under multiple names, which is why the same hands turn up under Kanehiro, Kintaro, and several Masakage lines.
Katsushige Anryu Fourth-generation smith of a family knife-making line that traces to the 1870s. He joined the family business in 1959 straight out of high school, apprenticed under his father Katsutoshi, and was a founder and later chairman of the Takefu cooperative. His signature work is Aogami Super clad in soft iron with a rough kurouchi finish, thick at the spine and thinned aggressively toward the edge; the look is deliberately unpolished and the geometry is more workhorse than laser. He also forged the Masakage Mizu line. He stepped back and retired in 2021, handing the forge to his nephew and long-time apprentice Takumi Ikeda. Blades sold as Anryu today are Ikeda's work.
Takumi Ikeda Fifth-generation head of Anryu Hamono. Unusually for the region, he is not from a blade-making background: born and raised in Yokohama, he moved to Echizen in 2007 and apprenticed under his uncle Katsushige Anryu. He was certified a Traditional Craftsman (Dento Kogei Shi) for kitchen knife making in 2020 and had already been forging most of Anryu Hamono's output for roughly three years before the handover. The succession date is reported as January 2021 in a dedicated account and as 2022 elsewhere; the earlier date comes from the more detailed source. Retailers describe his knives as effectively indistinguishable from Anryu's, which appears to be the deliberate intent rather than marketing shorthand.
Takeshi Saji Fourth-generation smith, born 1948, and one of the more visually distinctive makers anywhere in Japan. He worked from Takefu Knife Village, was certified a Traditional Master Craftsman in 1992, and returned his focus to kitchen knives in 2007. He is best known for coloured or "rainbow" damascus, exotic handle materials, and a willingness to forge steels that are difficult to work: VG-10, R2, Shirogami, and Aogami Super all appear in his lineup. The aesthetic is polarising and the knives are not cheap on the geometry-per-effort axis, but the heat treatment is well regarded. Sources describe him as still forging; one says "in his 80s," which does not square with a 1948 birth year, so treat the age framing as loose rather than the activity claim.
Kazuo Nomura Representative and president of Saji Uchihamono, the company behind the Takeshi Saji brand, and the person doing an increasing share of the forging as Saji ages. Certified a Traditional Craftsman in 2020. Sources disagree sharply on his relationship to Saji: some describe him as Saji's son, others as a long-time apprentice and handle maker, and one as a business partner of several decades. The generational framing is inconsistent too, with Saji given as third generation and Nomura as fourth on the same page that lists Naoya Saji and Kenta Nomura as fifth. Worth knowing about mainly because a knife stamped Takeshi Saji today may well be his work, the same situation as Anryu and Ikeda.
Yu Kurosaki Apprenticed under Hiroshi Kato and founded his own workshop in 2014. He is often described as the youngest recipient of the Master Nokaji (master blacksmith) title, though the exact framing varies by source. His output is organised into named lines with strongly differentiated finishes: Senko (rippled, mirror-adjacent), Shizuku, Fujin, Raijin, and Kokusen among them, with tsuchime and suminagashi treatments used heavily. The knives are thin, light, and finished to a high standard; opinions differ on whether the more dramatic hammered finishes help or hurt food release in practice. Widely available and a common first "name maker" purchase in the West. His older brother Makoto Kurosaki works in the same village as a sharpener and finisher.
Shiro Kamo Second-generation smith of Kamotou Hamono (also seen as Kamo Fuji Cutlery, founded 1955) and a Takefu Knife Village member. Born 1958, he learned from his father early and began forging knives himself at 25; sources give his Dento Kogei Shi certification at either 45 or 47. He is one of the small number of smiths who hand-forge powdered stainless steel rather than stock-removing it, which is his main claim on enthusiast attention. He works in Aogami Super, SG2, and Shirogami, usually with a kurouchi or damascus finish, and keeps a small crew while training successors. His blades supply house brands including Hatsukokoro.
Katsuyasu Kamo Second-generation smith of Kamo Hamono, born 1941 in what was then Takefu City, and the single most consequential organiser in the region's revival. He left Takefu High School in 1956 to study under his father Shintaro, co-founded the Takefu Forged Blade Industry Study Society in 1973, and served as first chairman of the Takefu Knife Village Cooperative. Certified a Traditional Craftsman in 2008; received the Order of the Sacred Treasure in 2016. His forging speciality is double-bevel work, and he is best known domestically for vegetable-harvesting blades developed with high-altitude farms in Nagano rather than for kitchen knives. He also drove the all-stainless integral handle seen on some of his knives. One source calls him third generation rather than second (reported, not confirmed). He is the older of two Kamos in the village, sometimes called Oh-Gamo, and is a different person from Shiro Kamo above.
Hideo Kitaoka Third-generation smith at Kitaoka Knife Manufacturing and, by the account of multiple retailers, the only smith in Takefu Knife Village specialising in single-bevel knives. That makes him an outlier in a region defined by double-bevel work. He learned from his father and has carried the family line for over 30 years, working mainly in Blue #2 with kasumi finishes on yanagiba, deba, and usuba. Awards include the Award for Successor of Traditional Crafts, a Japan Traditional Crafts Association Gold Award, a Minister of Economy, Trade and Industry Award, and the Order of the Sacred Treasure. Given his career length, retirement at some point is plausible, but no source reports it and his lines remain in regular distribution.
Yoshihiro Yauji Born 1983 in Echizen. He entered Kitaoka Knives in 2003 to apprentice under Hideo Kitaoka, acquired Traditional Craftsman certification in 2019, then left in April 2021 to set up his own workshop, Kutsurogi, within Takefu Knife Village. Like his teacher, he specialises in traditional single-bevel knives, which keeps a rare skill set alive in a region that has largely moved the other way. Output is small and distribution is thin outside a handful of retailers and the Hatsukokoro house lines. Worth knowing about mainly as the succession story for Echizen single-bevel work.
Takamura Hamono Founded 1945 and one of the oldest surviving knifemaking companies in Echizen. Forging and sharpening are both handled in-house. The workshop's reputation rests on being an early mover in forged stainless and, later, powdered stainless and powdered stainless damascus. The R2/SG2 lines are the reference point: very thin, very hard, ground to a fine edge, and generally described as "laser" geometry with the fragility that implies. Terukazu Takamura is identified as the current head blacksmith, with his father Toshiyuki and grandfather Isao before him; Toshiyuki received the Medal of Honour from the Emperor of Japan along with prefectural and national awards. Good food release is not what these are for; thinness is.
Ryusen Hamono A company rather than a single-smith workshop, based in Echizen City and described as having been founded over 70 years ago, with third-generation leadership under the Masutani family (Taiji Masutani as president, Koji Masutani as chairman). The catalogue is broad and design-forward: Blazen, Bonten Unryu, Bureizen, Tanganryu, Fukakuryu, and others, plus steak knives and non-kitchen cutlery. Ryusen sits closer to the polished, consumer-facing end of Echizen than the founder-generation forges do, and its work is often encountered through collaborations and retailer partnerships rather than under the Ryusen name alone.
Kunio Masutani (Masutani Hamono / Kunihira) Fourth-generation smith running a small Echizen house that occupies a segment none of the entries above cover: affordable, higher-volume stainless aimed at home cooks. Born 1944, he began under his father at 15 and opened his own shop around 30. He works mainly in VG-10 and V1-Gold in a deliberately small range of shapes to keep costs down, with most of the staff family. Following the departure of the smith they worked with, the hand-forged line was discontinued and production is now largely pre-laminated blanks stamped and ground in-house, so this is stock removal plus hand sharpening rather than forging (reported by a shop that toured the workshop in 2023). He is described as a brother or as a relative of Koji Masutani of Ryusen Hamono; sources use both words.
Takayuki Iwai The Iwai workshop has been making knives since 1939, and Takayuki Iwai received Traditional Craftsman certification in 1994. Documentation in English is thin: the available source emphasises that the knives are made by hand rather than mass-produced by machine, and does not give a generational chain or a current-status statement. Included here for completeness of the Echizen roster; anyone writing further on him should expect to work from Japanese-language sources or direct contact.
Masanobu Okada Third generation of Okada Uchihamono, born 1949, and since 1985 the holder of the Echizen Monjiro name. He learned from his father, himself an award-winning contemporary master craftsman. He is one of the few remaining smiths carrying the older Echizen forging techniques (mawashiho and maikozuchi, the folding method that works the billet to a rhomboid section). His output is mostly agricultural and specialist: sickles and pruning shears above all, with kitchen knives a comparatively recent and reluctant addition. He reportedly told one retailer he is not interested in making the knives the other village smiths make. Dento Kogei Shi certified, and received the Order of the Sacred Treasure in 2017. A useful counterweight to the impression that Echizen is entirely a kitchen-knife region.
Nao Yamamoto Successor to Masami Azai, one of the founding members of the Takefu group, and continues to produce knives under the Asai name from Takefu Knife Village. Described by retailers as an award-winning master blacksmith. Sourcing for this entry is retailer-only and thinner than for the other names above; the succession itself is consistently reported, but biographical detail, dates, and steel preferences could not be confirmed from a maker-side source.
Shungo Ogata A programmer before he entered the trade, Ogata apprenticed roughly seven years under Shiro Kamo as a sharpener, then went independent. He is filed here as a smith: sharpening into forging is a normal career progression in Echizen rather than a change of trade, and he is reported to still do his own grinding and finishing. Accounts of his process differ, with one retailer describing spring hammer forging and another describing blanks cut and heat treated by Takefu Special Steel with Ogata doing geometry and finishing; those may simply describe different points in his career or different lines. He is gaining prominence quickly.

Sanjo Smiths
Sanjo (Niigata)
Sanjo sits on the Igarashi and Shinano rivers in central Niigata. The local story is that repeated flooding wrecked farming, and in the 1620s farmers were taught nail forging as off-season work. New forging techniques arrived from the Aizu area around 1661, and the trade broadened from nails into sickles, saws, and kitchen knives. Merchants moved the output downriver, and the town became known nationally for hardware. Sanjo and neighbouring Tsubame are usually treated together as one industrial district, "Tsubame-Sanjo," though the knife makers below are Sanjo proper.
What distinguishes Sanjo from Sakai is the structure of the trade rather than any single technique. Sakai runs on division of labour, with separate forging, sharpening, and handle houses coordinated by a wholesaler. Sanjo workshops much more often do everything in house: forge, grind, heat treat, finish, and fit the handle under one roof. That shows up in the knives. Sanjo output skews toward double-bevel kitchen knives with thick spines, distal taper, and convex grinds, and toward rustic finishes such as kurouchi and nashiji rather than the mirror-polished wide bevels associated with Sakai. Iron-clad carbon steels (Shirogami, Aogami, Aogami Super) remain the core, though stainless cladding and semi-stainless cores such as SLD are now common.
Sanjo is also unusually genealogical for a modern craft town. A large share of the current independents trained at one of two or three workshops, most often Yoshikane, and the mid-career smiths working today are best understood as a single teaching lineage that fanned out from the 2010s onward.

Workshops
Yoshikane Hamono. Founded in 1919 by Kaneyoshi Yoshida and led by the Yamamoto family for four generations, currently by Kazuomi Yamamoto. Tsuneo Yoshida, grandson of the founder, ran it as third generation. Everything is forged and sharpened in the workshop. Yoshikane is the most consequential teaching forge in modern Sanjo: Naoki Mazaki, Masashi Yamamoto, Toshihiro Wakui, and Takahiro Nihei all trained there. The knives are known for being thin behind the edge relative to their spine thickness, with a distinct convexity, usually in Shirogami 2 or SLD with stainless cladding, finished tsuchime or nashiji. Yoshikane also forges collaboration lines for Hatsukokoro. If one workshop explains why Sanjo knives cut the way they do, it is this one.
Shigefusa. A family workshop run by Tokifusa Iizuka and his two sons. Tokifusa trained under Kosuke Iwasaki and later under Nagashima. Everything is forged by hand, including the kitaeji (suminagashi) cladding, which the family makes itself rather than buying in. Steels are Swedish carbon and 26C3. Shigefusa is the closest thing Sanjo has to a cult maker: output is small, waiting lists are long, and the kasumi and kitaeji finishes are the reference point other Sanjo makers get compared against. Opinions differ on whether the grinds justify the wait, and the workshop does no marketing of its own. Some sources romanize the family name Iiduka.
Hinoura Hamono. An Echigo forging family traced to founder Shintaro Hinoura in the Meiji era, so more than a century of continuous work. Tsukasa Hinoura, born 1956, is third generation; his son Mutsumi is fourth and entered the trade in 2001, working alongside his father from 2001 to 2025. Product lines carry the Ajikataya name. Hinoura knives are more sculpted than the Sanjo norm, with pronounced hammer work, shaped spines, and distinctive profiles rather than plain workhorse shapes, usually in Shirogami or Aogami. Both smiths are sold separately in the West, and the two hands are generally treated as distinguishable, though claims about which is which on unmarked pieces should be treated as community opinion.
Watanabe Hamono (Shinichi Watanabe). Sixth-generation bladesmith; the family has forged in Sanjo since 1897. The workshop is at Inokobashinden, Sanjo-shi. Watanabe sells directly from his own site and states the shop can make more than 800 different knife styles, which is unusual reach for a small forge and covers single bevel, double bevel, and traditional trade shapes. Hardness is quoted on his own pages as HRC 63 to 65 for most of the professional line, and HRC 63 to 64 for deba. A 2017 workshop visit documented two kilns (1000C and 800C) and output of roughly 600 blades a year. Custom handle options are currently listed on his site. Watanabe and Toyama are frequently sold together by retailers and are often discussed as a pair.
Tadafusa. Founded in 1948 by Sone Torasaburo, who started with sickles, short swords, and kitchen knives using forging skills learned as an apprentice making hand-forged scales. Now led by third-generation Tadayuki Sone. Tadafusa is the closest thing in Sanjo to a proper production maker that has kept real craft: forging, grinding, heat treatment, and finishing are all done in house, and the catalogue runs from soba knives and fishing blades to the "Basic Three, Next One" kitchen series of gyuto, petty, and bread knife. Steels include Aogami 2, Shirogami, and SLD, often stainless clad. Burnt chestnut handles are a house signature, and several models have taken Good Design Awards. The workshop runs factory tours and a showroom in Sanjo.
Toyama. Described by Japanese Natural Stones as a Sanjo blacksmith working alone, making each knife start to finish, with single-bevel ura work rated in the same conversation as Shigefusa. The Noborikoi line is made exclusively for JNS. Toyama is usually stocked alongside Watanabe. Two cautions. First, the given name rests on a single retailer product title ("Shuji"), with a "Syuuji" variant elsewhere, so treat the romanization as unsettled. Second, there is an active storefront at en.toyamahamono.com selling garden and craft blades under the Toyama Hamono name, and it is not confirmed that it belongs to this smith (reported, not confirmed). No founding year, kanji, or status statement was found in any source consulted.
Munetoshi (Koichi Tsurumaki). Third-generation blacksmith who started with his father at 16, working from a forge the family has used for three generations. The background is usumono and sickle forging rather than kitchen knives, which shows in the results: simple, robust, coal-forged blades, worked with a spring hammer and water quenched, usually Shirogami with a kurouchi finish. Munetoshi knives are commonly the cheapest genuinely hand-forged Sanjo carbon knives on the Western market, and are often recommended as a first carbon knife. Fit and finish are correspondingly plain; the value is in the steel and the geometry, not the presentation.
Naoki Mazaki. A one-man workshop in Sanjo. Mazaki came from Hokkaido, is not from a blacksmithing family, and trained under Tsuneo Yoshida at Yoshikane from 2011 to 2017 before founding his own shop around 2017. Every knife is forged and finished by hand and hand-polished on natural whetstones. Community reporting adds that he forges with a spring hammer, forge welds much of his own stock, and spends 45 minutes to an hour on each knife. The knives are known for thick spines, heavy convexity, and a rough kasumi finish, with a reputation for real variation piece to piece. Opinions differ on whether that variation is charm or inconsistency.
Masashi Yamamoto. Born 1976 into a Sanjo blacksmithing family; learned at the Yoshikane workshop from his uncle Tsuneo Yoshida and his grandfather. He began at 28 and started his own workshop at 36, after disagreeing with his older brother Kazuomi Yamamoto (now head of Yoshikane) about the company's direction. He forges and sharpens, works with assistants, and puts unusual weight on grinding and natural stones. His lines include Kaijin and Kokuen. Reported to be meticulous to the point of perfectionism, which fits the finish quality of the knives; the grinds are typically thinner and more refined than the Sanjo average.
Toshihiro Wakui. Third generation in a family known for hand-forged crowbars rather than knives. He trained under Kazuomi Yamamoto at Yoshikane for four years, then began making his own knives in a small Sanjo workshop. Wakui is best known in the West through Japanese Natural Stones, which sells a collaboration line finished at JNS on water wheels and natural stones, and takes some honyaki from him exclusively. The everyday knives are honsanmai construction in Shirogami or Aogami with kurouchi or nashiji finishes, generally regarded as strong value for hand-forged Sanjo work. One source prints the kanji as 涌井 聡宏 (reported, not confirmed).
Gihei Hamono. A father-and-son forge in Sanjo, identified as Atsushi and Takashi Hosokawa and described as third and fourth generation (one source instead calls the current head second generation, which is unresolved). Gihei is the Sanjo outlier on materials: the workshop specializes in ZDP-189 and, to a lesser extent, HAP40, alongside conventional Shirogami and Aogami. Forging high-alloy powder steel in a small traditional shop is uncommon, and it is what Gihei is sought out for. Visitors describe old tools and traditional methods applied to modern steel. Expect very high hardness and correspondingly demanding sharpening.
Kisuke Manaka. Fifth-generation blacksmith running a one-man workshop, Manaka Hamono Tanrenjo. He forges, forge welds, heat treats, sharpens, and fits handles himself. He is associated with warikomi forge welding, including with stainless steels, under the Enn and Kokuenn names. Sources conflict on his training: some describe him as self-taught with no mentor, others place Tsukasa Hinoura as a mentor or close collaborator. He married into the Manaka family. Note the location: he worked in Kasukabe, Saitama, and sources place him in Sanjo or Tsubame-Sanjo after 2025, so his inclusion here is recent and worth rechecking.
Kawamura Hamono (Yoshimune). A one-man workshop in Sanjo, selling under the Yoshimune name. Kawamura has forged by hand for around 50 years, working in Shirogami clad in stainless, with the tall profiles and burnt chestnut handles typical of the region. Retailers describe the knives as idiosyncratic in shape rather than refined, and the fit and finish is generally judged good for a smith working alone at his age. His work was covered on NHK, which is where most of the overseas interest came from. He is reported to be in his seventies with no successor, so availability is expected to shrink (reported by retailers, not confirmed by the maker). Note the name: some sources call this workshop "Kawamura Hocho Seisakujo," but the shops that carry the knives use Kawamura Hamono. Do not confuse it with the unrelated Kawamura Hamono in Sakai, which owns the Sakai Kikumori brand.
Tomoo Matsumura (Tojiro Atelier). Born 1976. He trained under Kazuomi Yamamoto at Yoshikane and also learned from Tsuneo Yoshida and Kinsaku Kondo, which puts him in the same teaching lineage as Masashi Yamamoto and Naoki Mazaki. Rather than going independent, he heads the hand-forging workshop at Tojiro, the large Tsubame-Sanjo maker founded in 1953, which reintroduced free forging in 2008 and sells that output as Tojiro Atelier. Each Atelier knife is made blade to handle by one smith, with a small team of apprentices under him. He is reported to favour VG-10, and SK steel for tools, and the Atelier line includes Aogami 2 damascus with stainless cladding. He is the clearest example in Sanjo of traditional forging sitting inside a modern factory rather than beside it, which is worth a sentence wherever the guide discusses the workshop-versus-factory divide.
Ohishi. Listed by one retailer as a maker or brand (大石) on a Sanjo gyuto, with Tadafusa named in connection with the same product. No biography, lineage, founding year, or status was found in any source. Included only so the name resolves; treat everything beyond "a Sanjo mark seen on retail knives" as unconfirmed. Not to be confused with the Toishi-Ohishi whetstone brand, which is unrelated as far as any source shows.
Shigeyoshi Iwasaki. Born 1933 in Sanjo into a family of blacksmiths, now deceased. He learned from his father, Dr. Kosuke Iwasaki, who designed the Iwasaki kamisori and classified Japanese steels into the yellow, white, and blue paper grades still used today. Shigeyoshi became a teacher rather than only a maker, training young Sanjo blacksmiths in both technique and metallurgical theory, including the smiths behind Shigefusa and Yoshikane. His student Ryoichi Mizuochi continues to make the razors and kiridashi. He belongs in a Sanjo section less for his own output than because the town's modern heat treatment knowledge runs through him.

Tosa and Other Region Smiths
Kochi Prefecture, on the Pacific side of Shikoku. The fourth region usually named after Sakai, Echizen, and Seki, and the one least shaped by the export knife market.
About the region
Tosa is the old provincial name for what is now Kochi Prefecture, and Tosa Uchihamono are the hammer-forged blades made in the eastern and central parts of it, centred on Kami City (Tosayamada), Nankoku, Ino, Tosa City, and Susaki. The craft is conventionally dated to over 400 years, with roots traced to a swordsmith of the Gorozaemon Yoshimitsu line who moved from Yamato Province around 1306. Records indicate roughly 400 smiths working in Tosa by the end of the 16th century, making swords alongside sickles and knives for farmers. Tosa Uchihamono received national Traditional Craft designation in 1998.
The defining technique is free forging (jiyu-tanzo): shaping a heated billet under the hammer without dies or molds, to whatever dimensions the customer names. That sounds like marketing language but it has real consequences. It means small runs and one-off shapes are normal here rather than exceptional, it means smiths in Kochi routinely handle the whole process (forging, hardening, grinding, finishing) instead of splitting it between specialists as Sakai does, and it means the regional output is enormously varied: kitchen knives, hatchets, axes, sickles, nata, forestry saws.
The character of the knives follows from what they were originally for. Kochi is heavily forested and heavily fished, and the local trade was tools for working outdoors. The Tosa look is a thick or unevenly finished spine, a bold kurouchi (black forge scale) left on the blade with only the bevel polished, and comparatively little attention to cosmetics. Some sources frame the retained scale as a deliberate protective oxide layer, which is a fair description of the effect, though it is also simply what happens when you do not grind it off.
Tosa's reputation lags its ability, and there are structural reasons for that. "Tosa" is not a current city name, so knives are marked and marketed under a dozen different local names with no single recognisable regional label. Most Kochi workshops built their businesses on domestic agricultural and forestry tools, not on export kitchen knives, so there was no equivalent of Takefu Knife Village organising a shared brand. For years Tosa was best known in the West as the source of cheap, rough, very good-cutting kurouchi workhorses sold under retailer or house names. That is changing, but through individual makers rather than a regional push.
Community opinion is fairly consistent that the region is undervalued relative to Sakai and Echizen, and equally consistent that fit and finish is the trade-off you accept for the price and the geometry.

Toru Tamura The most visible Tosa smith in the Western market, and an unusual case: he worked retail at Knifewear in Calgary before returning to Japan and apprenticing at Takefu Knife Village under Hiroshi Kato from 2010. He therefore brought Echizen training back to Kochi, including ni-mai construction, which his own retailers describe as uncommon in the Tosa area. He works mainly in traditional steels (Shirogami, Aogami, Ginsan) and forges for house brands including the Hatsukokoro Shirasagi line. His own brand, Tetsujin Hamono, pairs his forging with sharpening and finishing by Naohito Myojin, and is the reason most enthusiasts know his name. Tetsujin knives are known for a distinct wide-bevel grind and thinness behind the edge, and are usually discussed as performance-first rather than collector pieces.
Kyohei Shindo An outsider who became a Tosa smith rather than being born into one. Born in Hokkaido in 1988, he studied in Okinawa, came to Kochi through the cutlery sales side of the business, and opened his own workshop in Tosa. Sources give the founding as 2019 or 2020 and the workshop name as Kyohei Tanzo, while the mark on the knives is Miyabun (community reporting). He makes his own stock, works in Hitachi Blue #2 with soft iron, and favours warikomi construction. The knives are admired for a thin grind and an unusually clean, polished kurouchi finish, which is not the regional norm. Output is small and he has developed a cult following faster than his production can supply; expect limited availability rather than steady stock.
Kosuke Muneishi Third generation of Muneishi Hamono, a Tosa forge founded in 1955. His father Hirotaka made forestry tools, axes and machetes; Kosuke moved the workshop's focus to kitchen knives. He works almost entirely in Aogami 2, in san mai with either iron or stainless cladding, and carries out forging, hardening, hammering, and edge work himself. The blades are thin with no thickening behind the edge, which is the practical selling point: they cut well out of the box and sharpen easily. Finish is rustic kurouchi with visible forge texture, and a suminagashi-clad version exists as well. Muneishi is one of the most common ways a Western buyer first encounters a Tosa knife, usually at a price that undercuts anything comparable from Sakai or Echizen. Fit and finish is basic and consistent with the regional norm.
Tsutomu Kajiwara Third-generation Tosa blacksmith working largely alone, which keeps availability low and lead times long. His output is hand-forged san mai in Aogami 2, iron-clad, in two visual variants: a plain kurouchi line and a damascus-clad line. Reported hardness is around HRC 62. Retailers consistently describe the knives as strong value rather than showpieces, and the finish is rough in the ordinary Tosa way. One retailer gave his age as 64, undated, so treat that as a rough marker rather than a fact. He also trades under the Tosa Kajiya name in some markets, where the workshop is described as a father-and-son operation (reported, not confirmed against a maker-side source).
Takeo Murata (Buho) Born in 1949 and apprenticed at 16, in 1965, under his uncle, the blacksmith Tokaji, going independent about ten years later. He signs his work Buho (also written Buhou), an artisan name, so his knives are usually sold under that mark rather than his own. He works mainly in Aogami 1 clad in soft iron, at a reported HRC 61 to 63, with an Aogami Super line added later; finish is kurouchi throughout. The domestic core of his business is santoku, nakiri, and the fisherman-oriented shapes common in Kochi (funayuki, sabaki, ko-bocho). Tips on many of his knives are ground off at an angle deliberately, which routinely gets mistaken for damage. A retailer reported in 2021 that he had stopped working for the factory that formerly distributed him, which appears to be the source of persistent "Murata retired" rumours; the same source said he was still forging.
Michikuni Tokaji Better known through his brands than his name. He forges the Karaku line and is associated with Zakuri, itself described as a grouping of Tosa blacksmiths rather than a single workshop. Product is Aogami 1 and Aogami Super, kurouchi, in straightforward shapes with magnolia handles, positioned as entry-level carbon. The family name recurs across Tosa: Tadayoshi Tokaji and his son Tsukasa run Tokaji Forging, both certified Takumi of Tosa, with Tsukasa teaching at the Kochi prefectural blacksmith training school. Whether Michikuni is part of that same family is not established in any source found (unconfirmed). He is also the uncle who trained Takeo Murata, per Murata's own account, which if correct makes him a generation older than the retailer copy implies.
Tosaichi Hamono (Suzuki-san) A group of blacksmiths in Tosa City working under a head smith identified only as Suzuki-san, forging to retailer specification. Retailers claim an 800-year lineage for the operation, which is a marketing figure rather than a documented founding and should be read as such. The line most often seen in the West is stainless-clad Aogami Super at HRC 62 to 63, ground genuinely thin: spine thickness around 2mm and weights near 105g at 170mm, which puts them in laser territory at a price no laser from Sakai reaches. Worth including because it is the clearest example of how most Tosa output actually reaches Western buyers, through a retailer relationship rather than a named maker. Not a single-smith entry, and not to be confused with Tsukasa Suzuki in Yamagata.

Other Regions: Smiths
Everything outside Sakai, Echizen, Sanjo, and Tosa. This is not a leftovers list. It includes several of the most sought-after names in Japanese kitchen cutlery, and the only thing they share is that they do not sit inside one of the four big production clusters.
About this group
The four named regions are production centres, meaning concentrations of workshops with shared supply chains, shared apprenticeship networks, and in some cases a shared brand identity. Plenty of Japan's best knife-making happens outside them, in three broad patterns.
First, other regional forging traditions that never became export brands: Tsugaru in Aomori, Yamagata, Kumamoto and Higo in Kyushu, and Bicchu in Okayama all have their own histories, mostly rooted in farm and forestry tools or in sword work.
Second, ex-swordsmiths and their descendants. Japan tightly licenses sword-making, and a licensed swordsmith who adds kitchen knives brings a very different set of habits: forging from bar or self-made stock, honyaki and forge-welded damascus, minute output, no interest in throughput. Kiyoshi Kato and Yoshiaki Fujiwara are the clearest cases here.
Third, one-person modern workshops set up by people who came to the trade sideways, often in their thirties, after other careers. Jiro Nakagawa, Abe Isamitsu, and Kyohei Shindo over in Tosa all fit that description. This is arguably the most interesting thing happening in Japanese knifemaking right now, and it is happening almost entirely outside the traditional centres.
The practical consequence for a buyer is availability. Most makers in this section produce in very small numbers, distribute through a handful of retailers, and sell out on release. Where a Sakai or Echizen knife is a purchase, several names below are a queue.

Chugoku and Sanin
Shosui Takeda Third-generation head of Takeda Hamono, a workshop founded in 1920 that moved to Niimi, Okayama in 1951. He returned to Niimi after university to succeed his father and has been forging under his own name since 1985. Almost everything he makes is Aogami Super, stainless-clad, with a rough kurouchi finish, and the geometry is the point: tall, very light blades ground extremely thin with a low, long bevel, so they cut far above their weight and need little sharpening once set up. The trade-off is a thin, chip-prone edge and finish work that is deliberately rustic. The workshop is small (Takeda plus a couple of workers) and also makes hatchets, axes, sickles, and hunting knives. He paused production for health reasons around 2021 (community reporting) and has been working since.
Tanabe Tatara is not a knife workshop but a tamahagane steelmaker whose material reaches the market as knives forged by others. Covered in the steels section.
Shoichi Hashimoto Born in Hiroshima in 1982 and, unusually, formally educated rather than apprenticed: he entered the Faculty of Arts at Hiroshima City University in 2001 and spent roughly a decade there as student, research assistant, and part-time assistant in metal crafts. Two influences are named repeatedly, a master swordsmith surnamed Mikami and the Dutch damascus smith Mendel Jonkers. He calls himself a modelling knifemaker, and designs, forges, grinds, and sharpens entirely alone. Output is a handful of blades a year: coreless and pattern-welded damascus, twist-core work in Shirogami 2 and Aogami 2, and mizu-honyaki in Shirogami 1. Finishing is often handled by the Tosa sharpener Naohito Myojin. He is close to invisible online (no social media, orders by fax), so availability runs entirely through a few retailers and knife shows. Note the source conflict on his teacher's given name: Takanori Mikami and Sadanao Mikami both appear (unresolved).
Tohoku and the north
Nigara Hamono A Tsugaru forge in Hirosaki, Aomori, with a lineage of about 350 years and eight generations, originally appointed by the Tsugaru clan to make swords. Sword production ended in 1965 and the business moved to knives; its goods were certified an Aomori Prefecture Traditional Craft in December 2007. The fifth-generation smith, Kunitoshi Nigara, is widely described as a national treasure-level swordsmith with commissions for Ise and Meiji shrines. The current head is the eighth generation, whose given name (kanji 剛) is romanised as both Go and Tsuyoshi across sources; he took over in 2011. Nigara's advantage is that the wider family business does industrial steelwork, so damascus patterning is developed in-house. Output splits between efficient machine-forged stainless lines (SG2 kurouchi tsuchime, VG-10 damascus, stainless-clad Aogami Super) and lower-volume showcase work such as the Anmon pattern, created in 2008. Geometry runs thin and modern.
Tsukasa Suzuki A Yamagata smith who started at 18 and has been at it roughly 40 years, having learned directly from his father. He is known first for hand-forged sickles, with kitchen knives as a secondary output, which is a common pattern for regional Japanese forges and a useful reminder that the domestic tool trade is still the main business for many smiths. Community discussion associates his knives with strong food release, and reports that he has moved back toward sickles, but neither is confirmed by maker-side sourcing. Documentation in English is thin and mostly retailer-supplied. Worth knowing about as one of the more genuinely obscure names that surfaces in enthusiast trading.
Takahiro Nihei Originally from Fukushima, trained under Yoshikane Hamono in Sanjo before opening his own workshop in 2019. He works mainly in White #2 and also in Aogami Super and SLD, and is praised for thin grinds and clean finish work. He is usually named alongside Masashi Yamamoto as one of the makers Yoshikane trained, and much of his output reaches the market through Hitohira. Depending on how the Sanjo section handled the Yoshikane apprenticeship tree, he may already be covered there; if so, cut this entry rather than duplicating it.
Kanto and Chubu
Teruyasu Fujiwara A fourth-generation Tokyo smith from a family that has been forging steel for over 140 years, which makes him unusual simply by being an urban blacksmith in a city that has almost none left. He is known for the Maboroshi and Denka lines, with in-house stainless-clad carbon construction. The reputation rests on hardness: these are commonly discussed as some of the harder and more brittle production carbon knives available, extremely good at holding an edge and unforgiving of lateral force or careless board contact. Fit and finish is generally described as functional rather than refined. Distribution is steady and the Maboroshi and Denka lines remain in regular circulation.
Kiyoshi Kato A licensed sword maker since the late 1970s, trained under his father and grandfather, working from Hokuto City in Yamanashi. He added kitchen knives to a small, entirely hand-worked production, forging and heat treating by traditional methods. Volume is very low and knives are sought after accordingly. Typical output is Aogami 2 with a kurouchi finish. He is frequently confused with Hiroshi Kato of Echizen, who is unrelated, and community posts sometimes conflate him with Yoshiaki Fujiwara, who works in the same city; both confusions are worth checking before trusting a listing.
Yoshiaki Fujiwara A third-generation swordsmith, born in Tokyo in 1944, who began making Western-style knives in 1977 and moved his workshop from Meguro to Hokuto City in 2000. He works with hand-made damascus and traditional forge-welding and folding, and signs blades Fujiwara Yoshiaki. Not related to Teruyasu Fujiwara, despite the shared surname. Some retailer listings and community posts have attributed his knives to Kiyoshi Kato, who works in the same city; the two names appear together in enough listings that provenance on secondhand pieces should be verified. Output is small and reaches the market in irregular batches.
Jiro Nakagawa A one-man workshop in rural Nagano, and one of the clearest examples of the modern craft-first maker. He favours Shirogami 1, hand-laminates into soft iron using warikomi, water-quenches, and finishes with kasumi polishing on natural stone; retailers describe finish sharpening on uchigumori and hand-polishing using Japanese sword polishing technique. He sought out craftsmen around Japan to learn, including a master sword polisher, and practised calligraphy for over 20 years to support his hand engraving. Blades are individually numbered and dated. Effectively one-of-one production with correspondingly limited availability. Note that he is a different person from Satoshi Nakagawa of Sakai; the two are regularly confused, including in some retailer copy.
Yusuke Obi (Sadamasa) Sadamasa Kajiya was founded in 1920 in Chino, Nagano by Obi's great-grandfather. He returned from Tokyo in 2008 to restart the family workshop and now forges knives, hatchets, outdoor knives, and other tools, much of it for the family hardware store. Community reporting describes his kitchen knives as hammer-forged san mai. This is a good example of the ordinary case in Japan: a rural forge whose primary market is local, whose kitchen knives are a sideline, and which is essentially unknown in the West except through occasional enthusiast finds.
Sukenari Founded in 1933 in Toyama Prefecture by Hanaki Toukichi, who trained at Masamoto Hamono, and now run by the second through fourth generations of the family. Despite the house-sounding name, this is a forge and the forging is done in-house. Sukenari's reputation rests on two things: honyaki and mizu-honyaki work, which few workshops attempt at any scale, and early adoption of modern powdered steels, ZDP-189 in particular. It also forges the Fu-Rin-Ka-Zan lines for Japanese Chef's Knife. Small operation with a devoted following rather than broad distribution.
Kei Kobayashi Primarily a sharpener rather than a forger, and included here because his knives are sold under his own name. He runs a machine sharpening company in Seki City, Gifu, and has sharpened for other makers for years, including some well-known blacksmiths, before recently establishing his own brand. The output tends toward SG2 damascus with clean, modern finishing. Sources conflict on location: one retailer describes him as an Echizen-based blacksmith and sharpener, but the stronger evidence places him in Seki. Seki itself is a major production centre, but it is dominated by factory and semi-factory production rather than named individual smiths, which is why it has one entry here instead of a section.
Abe Isamitsu A two-person workshop in Sakuragawa, Ibaraki, started in 2022 by Yuki Abe and Gaku Kanatsu after long apprenticeships with the same master. Neither came from a blade background: Abe worked in professional kitchens before apprenticing, Kanatsu in PR and design. Abe's wife Naoko is also an apprentice there. They hand-forge one knife at a time and use a simple, crisp kurouchi finish, and they describe cross-pollinating with other Japanese knife makers rather than working in isolation. Very new, very small, and a reasonable bet for anyone who wants to buy into a maker early rather than wait out an established queue.
Yoshito Yamakawa (Goko Hamono) A father-and-son workshop in Kashiwa City, Chiba, well outside any traditional centre. Norihiko Yamakawa founded Goko Hamono in 1990 as a cutlery wholesaler and converted it into a forging workshop in 1995 with help from a blacksmith named Moriei Seki; Yoshito, a high school student then, followed his father into the trade. Knives made by Yoshito carry the Kogetsu mark. The workshop is designated a traditional craft producer by Chiba Prefecture and does the whole process in house, which is unusual for its size and location. Steels range from White #1 san mai stainless-clad to Korikin, a proprietary stainless and heat-treat protocol developed in-house and run around HRC 59 to 60, which is softer than the enthusiast norm and aimed at durability rather than edge-holding records.
Yoshisada (Taichiro Yamaguchi) One of the last workshops making Kyo-hamono, Kyoto blades. Founded in Higashiyama in the mid-Edo period and claiming roughly 360 years and ten generations, it now operates from Kumiyama in southern Kyoto, where the tenth-generation head works with a couple of younger artisans. He started at 15 and took over at 27 after his father's death, and received the Medal with Yellow Ribbon in 2011. The work is carbon steel, forged hot and hammered to refine grain, and the customer base is as much traditional trades as kitchens: tatami knives, tools for craft industries, fittings for Gion Festival floats. Kitchen output includes Aogami 2 damascus in Kyoto profiles such as hamokiri. His given name is romanised as both Taichiro and Teiichiro across sources (unresolved).
Kyushu
Moritaka Hamono A family forge now in Yatsushiro, Kumamoto, claiming descent from swordsmith Kongohyoe Minamoto no Moritaka and a founding date of 1293, with relocation from Dazaifu, Fukuoka in the 17th century. The family lineage is genuinely old, but a 1293 founding is a traditional claim rather than an independently documented one and should be presented that way. The current head is the 27th generation, Moritaka Tsunehiro. Product is hand-forged Aogami Super with a kurouchi finish, ground and sharpened on whetstones by the workshop's own craftspeople. Moritaka knives are a common entry point into carbon kurouchi and are usually discussed as good cutters with variable finish, occasional overgrinding, and a slightly convex profile.
Daisuke Nishida A Kumamoto smith who became a disciple at 19, trained for nine years, and set up his own workshop in 2006. He works by warikomi and is best known for White #1, which is a demanding steel to heat treat well and a deliberate specialisation rather than a default. Output is small and mostly reaches the West through a few importers and house lines. His blades are usually encountered as kurouchi carbon workhorses in classic shapes. Documentation in English is limited to retailer profiles, so biographical detail beyond the above should be treated as unconfirmed.
Yoshida Hamono A family company in Saga, Kyushu, with a background in swords as well as tools. It was established by Seiji Yoshida under his father Nobuichi, and Seiji received a Newcomer Award at the Japanese Sword Exhibition in 1943. Master Osamu Yoshida is the name most often attached to current production. The workshop is strongly associated with ZDP-189, one of the hardest steels in kitchen use, and also works in VG-10, Ginsan, and Swedish steel. The combination of a traditional forge background with very hard modern powdered steel is what makes them distinctive; expect high edge retention and correspondingly demanding sharpening.
Haruki Miyazaki (Miyazaki Kajiya) A young smith working from the Goto Islands off Nagasaki. He decided on the trade after high school, apprenticed for about five years in Fukuoka, then returned to Goto and opened his own workshop. Sources name his master as Toshio Ooba, with one page instead naming Yoshimitsu, so the training lineage is not fully settled. His work is associated with the Hakata style and is generally kurouchi carbon in practical shapes. Demand has outstripped his capacity: at one point special orders were reported backed up by around two years. The age figure of 35 that appears in retailer copy is undated and should not be used as a current fact.
Yukihiro Sakai (Hinokuni) A young Kumamoto smith who apprenticed under Daisuke Nishida and recently set up on his own. He inherited Nishida's insistence on forge-welding in house rather than buying pre-laminated stock, and works in Shirogami 1 clad in soft iron with a kurouchi finish. That matters for a specific reason his retailers point out: controlled forge-welding limits carbon migration from the core into the cladding, which is the same argument made for Takeda and Moritaka. The knives are hefty and forward-balanced, closer to workhorse than laser, with even grinds and thin edges, and are priced low for what they are. Hinokuni, meaning country of flame, is a nickname for Kumamoto after Mt. Aso, and is his brand rather than a family name. Reported age of 31 is undated retailer copy.
Matsubara Hamono (Katsuto Tanaka) A father-and-son forge in Omura City, Nagasaki, established 1933 and often listed under the workshop's registered name, Tanaka Kama Kogyo. Katsuto Tanaka is the fourth generation and works alongside his son Hiroki. The area's tradition is sickle-making, and when Ito Kajiya, the head family that had produced Matsubara sickles for centuries, closed, it passed its methods to the Tanaka workshop; only around three blacksmiths remain in the area from about twenty in the early Showa period. Tanaka laminates by hand using warikomi, cutting a groove in soft iron and setting the core steel in. Steels are White #1 and #2, Blue #2, and Ginsan, with rustic kurouchi and tsuchime finishes and characteristically tall profiles. The workshop also runs hands-on knife-making sessions and lodging.
Junichi Ide (Yosimitu Kajiya) A small family forge in Shimabara, Nagasaki, founded in 1937 by the current smith's great-grandfather; Ide is the third generation and runs it with his mother and wife. He free-forges, in the same sense the term is used in Tosa, from pre-welded stock, and does grinding, handle-fitting, and final sharpening himself, which is rare anywhere in Japan. Steel is mainly Shirogami 2 at a reported HRC 58 to 60, iron-clad warikomi with a kurouchi finish. The knives are thin, light, rustic, and cheap, made as much for local farming and fishing customers as for the export market. Nagasaki's blacksmithing survives in three districts (Omura, Shimabara, and one identified by Ide as Kayaki), each with its own historic speciality; that framing comes from Ide himself via a forum interview, and is useful context but single-sourced.
Yasuaki Taira (Morihiro Blacksmith Factory) Born in 1965, second generation of a workshop in Yame City, Fukuoka. He graduated high school in 1983 and trained at the Ajioka sharpening workshop in Sakai before learning old-style forging from his father, so his output combines Sakai-trained finishing with a Kyushu forge. He does everything from forging to sharpening himself. The work sits at the high end: honyaki and mizu-honyaki in Shirogami 1, tamahagane pieces, full mirror polishes, and decorative hamon on single-bevel yanagiba and takohiki. Very little of it circulates outside Japan. Retailer accounts also describe him making swords and running forging experiences at the local crafts museum, which fits the profile but is not confirmed maker-side.

Sharpeners and Houses
In Sakai and, to a lesser degree, the other traditional production centres, forging and sharpening are separate trades. A blacksmith forges and heat treats the blank; a togishi thins it, sets the bevels, establishes the shinogi line, and finishes the surfaces. The sharpener decides most of what you actually feel when you cut: how thin the knife is behind the edge, how food releases off the face, how cleanly the bevel transitions, and how the choil and spine are eased.
This is why the same smith's blade behaves differently under different names. A Yoshikazu Tanaka blank finished by Kyuzo, by Myojin, or by Maruyama is three different knives in the hand. When a retailer lists both smith and sharpener, the sharpener credit is not decoration, it is half the spec.
One lineage runs through most of the modern high-end Sakai double-bevel work: Kawakita taught Morihiro, and Morihiro taught Myojin, Nishida, and Tadokoro.

Kawakita Kazumi
Kawakita Hamono, Sakai. Kawakita is the upstream node in the modern Sakai sharpening tree: many of the best-known working togishi are his former students, Morihiro explicitly among them. Little biographical detail about him is published in English, which is normal for a craftsman who has never traded under a consumer-facing brand of his own.
His current visible work is contract finishing for houses rather than a named line. He is credited as the sharpener on the Hatsukokoro x Satoshi Nakagawa series, which is the easiest place to encounter his grinding in the retail market. Treat him primarily as a lineage anchor: when a retailer says a sharpener "trained in the Kawakita line," this is the origin point they mean.
Morihiro (Morimoto Hiromi)
Sakai, retired. Morihiro is the most consequential Sakai togishi of the last two decades. A student of Kawakita Kazumi, he was the sole sharpener of the Konosuke Fujiyama line until 2018, and he is credited with pioneering the application of traditional Sakai wide bevels to double-bevel wa-bocho, along with the mirror-polished choil and spine treatment now copied everywhere.
He has retired from bench work and sharpens very few knives or none himself. Morihiro Hamono continues as a small multi-sharpener workshop doing contract finishing for smiths and brands such as Nakagawa and Hatsukokoro, rather than selling under its own name. His students include Naohito Myojin, Nishida Sho, and Tadokoro Makoto.
Community reporting adds that Fujiyama was co-designed with Konosuke's Kosuke Kawamura from 2007 and that the later FM and FT versions are not his work. Not confirmed by a primary source, but widely repeated.
Naohito Myojin
Myojin Riki Seisakusho, Susaki, Kochi. Second-generation sharpener in his family workshop. He started in the trade at 18 as a blacksmith and switched to sharpening about three years later, then trained several years in Fukui Prefecture where he learned hamaguriba (clam-blade) convex sharpening. He later apprenticed under Morihiro and was selected to take over the Fujiyama line, which Konosuke sells as FM Fujiyama with blades forged by Yoshikazu Tanaka.
His grinds are known for thinness and consistency rather than drama, and he works across a wide range of clients: he finishes blades for several Sakai houses, he is half of Tetsujin with blacksmith Toru Tamura, and he appears on Hatsukokoro lines. Some sources report he has begun forging a few of his own knives as well, so the smith/togishi line is blurring in his case.
Takada Mitsuaki
Takada no Hamono, Sakai. Takada spent roughly fourteen years at Ashi Hamono from 2004 before founding his own operation in 2018, converting a vacant townhouse into a workshop. Japanese trade coverage classifies him specifically as a hatsukeshi, an edge-setting sharpener, rather than a maker.
Takada no Hamono is a one-man grinding and finishing house, not a forge. Blanks come from Sakai smiths such as Tanaka and Nakagawa, and Takada does the grinding and finishing. His focus is thin convex and hamaguri-style double-bevel grinding, plus honyaki finishing. Distribution inside Japan runs through Hitohira, which states it does not sell his knives directly.
He also established a personal brand, Mitsuaki-T, in 2008. A community claim that he sharpened Konosuke's FT Fujiyama is unconfirmed (reported, not confirmed).
Kyuzo
Sakai. "Kyuzo" is the sharpener credit used on Hitohira's Tanaka Kyuzo lines, and it is a brand-side name rather than a documented legal one. His father, Heihachi, is described as one of the busiest sharpeners in Sakai; Kyuzo learned rough sharpening under him and then studied under Kambei, a sharpener with a particular reputation for wide double-bevel work. His own style is described as a combination of the two.
What you get is a wide double bevel with a well-defined shinogi line, which Hitohira presents as a skill only a few in Sakai can execute at this level. Opinions differ on how his bevel shoulder compares to Maruyama's, and preference between the two is genuinely a matter of taste.
Forum speculation connects the Kyuzo name to the Yauchi family. Treat that as unverified.
Nomura Shotaro
Sakai. Nomura began in 1962 and apprenticed at Ino Hamono under Mr. Ino, learning the techniques used for premium uwamono knives destined for head chefs. He was certified a Traditional Craftsman (dento kogeishi) in 1988 and is listed on the Sakai forged-blade association's togishi roster as a Sakai monozukuri meister.
He is now past 80 with more than 60 years at the bench, and he is described in the present tense as a working guardian of the Sakai tradition. His reputation rests on kasumi polishing and mirror finishing, the classic single-bevel skill set rather than the modern thin double-bevel style. He is named as one of the two trainers of Maruyama Tadataka, which places him upstream of the current Hado house style.
Ajioka Tomoyuki
Ajioka Hamono, Sakai. More than half a century in the sharpening trade. His signature is a grind that tapers steadily from spine to edge, which gives very smooth food entry rather than the abrupt shoulder some wide-bevel finishing produces.
He matters as much for what he does off the wheel: he hires large numbers of young apprentices and teaches at local high schools, in a trade where succession is the main structural problem. Ajioka Hamono is registered as a multi-craftsman sharpening house rather than a one-man bench, sharing an address with another registered togishi.
His most accessible work is a small Knifewear collaboration line, blades forged by Yoshikazu Tanaka and ground by Ajioka, commissioned through the wholesaler Sakai Kikumori.
Morimoto Koichi
Morimoto Knife Manufacturers, Sakai. Certified a Master of Japanese Traditional Crafts for blade grinding in 1987, and awarded Naniwa-no-Meiko, Master Craftsman in Osaka, by the prefectural government in 2005. He runs his business in Sakai with his sons, so this is a family sharpening house rather than a solo bench.
Important disambiguation: this is a different Sakai Morimoto from Morihiro, whose legal name is reported as Morimoto Hiromi. The surname collision causes regular confusion in forum discussion and occasionally in retailer copy. The association roster also lists a third Morimoto at a neighbouring address, which does not help.
His retail visibility in the West is limited, largely through Japan-based shops selling under his own name.
Maruyama Tadataka
Nara, formerly Hado in Sakai. Maruyama came to the craft sideways: he was a sales representative and warehouse manager at Fukui Craft (Oul Sakai) and asked to leave to become a sharpener. The company kept him on salary while he apprenticed for roughly two and a half years under a Sakai master who specialised entirely in single-bevel work, then built him a workshop and expected double-bevel production on his return.
He became head sharpener of Hado, launched in 2019, and the house style he set (thin, wide bevel, mirror-polished spine and choil blending into kurouchi or nashiji) is what the brand is known for. Lines include Sumi, a Knifewear collaboration on Yoshikazu Tanaka blades, plus Kirisame and SG2 lines.
In July 2025 he declared independence and opened his own shop in Nara. Colleagues at Hado took over the sharpening there.
Nishida Sho
Baba Hamono, Sakai. Nishida started as a chef in his father's sushi restaurant at 20 and only began apprenticing at 30, under Morihiro and Hirofuji. That late start is unusual in a trade normally entered as a teenager.
He is Baba Hamono's in-house sharpener and leads the sharpening team behind Kagekiyo, the house's top line, which opened its own sharpening workshop in 2017. His work is known for shinogi and wide-bevel sharpening, mirror polish, and honyaki finishing. Kagekiyo blanks are forged by Sakai smiths including Tanaka and Nakagawa.
Community reporting suggests a younger sharpener at Baba now finishes some Kagekiyo pieces, which is offered as the explanation for examples lacking a defined shinogi line (reported, not confirmed).
Togashi Kenya
Sakai. Kenya is the sharpener on Hitohira's Togashi lines, paired with smith Kenji Togashi of Togashi Uchihamono in Sakai. The pairing covers both single-bevel work and double-bevel wide-bevel finishing, including Damascus gyuto and White #1 mizu-honyaki fugubiki.
The arrangement documented in retailer specifications is straightforward family-workshop in-house sharpening. The exact relationship is not: sources conflict, with some describing Kenya as Kenji's brother and others as his third son. Both claims come from secondary reporting and neither is confirmed, so the safe statement is that they work as a family unit in the same workshop.
He is consistently described as one of Sakai's stronger sharpeners, though most of that assessment is community opinion rather than documented record.
Tadokoro Makoto
Tadokoro Hamono, Tosa City, Kochi. Tadokoro began at 15 shadowing Morihiro in Sakai, then set up in Tosa. What makes him interesting structurally is that he transplanted the Sakai finishing method out of Sakai: blades are forged elsewhere and shipped to him, and he applies a finishing sequence described as more than 30 steps.
His single-bevel fit and finish is frequently singled out in enthusiast discussion, particularly on yanagiba. He offers custom-specification orders, which is uncommon at this level.
One unresolved conflict worth knowing: sources disagree on who forges his blanks, with one naming Shiraki Hamono in Sakai and another naming Tanaka Uchihamono. Both are in circulation and neither has been confirmed over the other. Michiko Tadokoro handles customer service.
Yauchi Tsuyoshi
Sakai. Yauchi is credited as the current sharpener on Yoshikazu Tanaka Blue #1 and White #2 kurouchi gyuto sold through Chef Knives To Go, which is essentially the whole documented record on him. He has no consumer-facing brand of his own and no published profile.
Related but distinct, and worth keeping separate until someone confirms otherwise: Yauchi Hamono Mfg. in Sakai, whose second-generation sharpener Yasuo Yauchi has around 50 years of handmade knife work and specialises in double-bevel knives, now a rarity in Sakai. No fetched source links Tsuyoshi and Yasuo explicitly.
Community reporting connects the Yauchi name to Hitohira's Kyuzo pseudonym. Unverified, and Hitohira does not comment on it.
Takayuki Shibata
Ironclad Ltd., Fukuyama, Hiroshima. Shibata is a sharpener turned brand builder. He was a machinist at Mitsubishi before his sharpening career, founded Masakage in 2007 as a unified brand for Echizen and Takefu makers, and later created Koutetsu from his own workshop. He is president of Ironclad and involved in Tinker and West Japan Tools.
His documented technique is asymmetric: the left side taken to roughly 800 grit and the right to roughly 8000, trading some polish for bite. All Masakage knives are hand sharpened at his workshop.
One thing to get right: the widely repeated claim that Shibata trained under Morihiro is not supported by any primary source, and he has reportedly denied it himself. Do not present that lineage as fact.
Documented but not profiled
These names appear in circulation without enough grounded material for an entry yet: Hirotsugu Tosa (Sakai Takayuki, reported retired), Mitsuo Yamatsuka (resident sharpener, Sakai Takayuki), Kambei (Kyuzo's teacher), Heihachi (Kyuzo's father), Hirofuji (co-teacher of Nishida), Tateo Myojin (Naohito's father and teacher), Nomura Shotaro's contemporaries on the Sakai association roster, and Ashi Hamono, whose in-house sharpening underlies the Gesshin Ginga line.
Houses
A house is a brand that commissions and coordinates rather than forges. It selects the smith, selects the sharpener, specifies the steel, geometry, finish, and handle, and puts its own name on the result. This is the normal structure of the Japanese kitchen knife trade, not an exception, and it exists because forging, sharpening, and handle fitting have been separate trades for centuries.
The practical consequence for a buyer: the house name tells you who chose the spec and who stands behind the fit and finish, but not who made it. Two houses using the same smith and the same steel can produce knives that handle nothing alike, because they briefed different sharpeners. Some houses are pure coordinators, some now run in-house sharpening, and a few started as retailers and worked backwards into commissioning. Those are meaningfully different businesses wearing the same label.

Konosuke
Sakai. The brand was founded in 2006 and is operated by Kaneshige Hamono (Kawamura Shoten), with Kosuke Kawamura as president. A Danish retailer traces the parent shop back to 1932 under Kenjiro Kawamura, so you will see both dates cited; the 2006 date is the brand, the 1930s date is the family business behind it. Both are stated by sources and the conflict is unresolved.
Konosuke is the clearest illustration of why sharpener credit matters. Fujiyama, its flagship, was forged by Yoshikazu Tanaka throughout and sharpened by Morihiro until 2018, after which the FM version passed to Naohito Myojin. Same smith, same name, different knife.
The house works with smiths across Japan, including Sanjo makers, and runs multiple line codes (Fujiyama, FM, MM, Sanjo YS) that are not obvious from the outside.
Hitohira
Sangenjaya, Setagaya, Tokyo. Founded 2016, president Hokuto Aizawa. Hitohira is two businesses in one: a house that commissions collaborations between specific blacksmiths and grinders, and a wholesaler that supplies Japanese knives and stones to specialist retail shops abroad. It reports handling several thousand knife types and distributing to shops across roughly ten countries, with a few hundred knives on display in the Tokyo store.
Its own shop does sharpening and handle fitting on site, visible from the floor. The roster it presents includes Jiro, Tetsujin, Morihei, Takada no Hamono, and Kajiya Daitoku, and it is credited with bringing the smith Jiro to the Western market.
For collectors, the Hitohira lines to know are the Tanaka Kyuzo and Togashi pairings, where the house names both craftsmen explicitly.
Hatsukokoro
Amagasaki, Hyogo. Parent company H&K was established in 2013 and launched the Hatsukokoro brand (also read Shoshin) in 2019. It expanded fast and now has broad global distribution.
The model is wide-net commissioning rather than a single workshop relationship. Documented affiliations include smiths Satoshi Nakagawa, Yu Kurosaki, and Shiro Kamo, sharpeners Morihiro Hamono, Naohito Myojin, and Tateo Myojin, and separate lines forged and sharpened by Nigara, hand-forged by Muneishi Hamono in Tosa, or made in Seki. There are also Hatsukokoro x Yoshikane lines.
The practical implication is that "Hatsukokoro" tells you very little on its own. The line name is the useful unit, since two Hatsukokoro knives may share nothing but the brand.
Sakai Kikumori
Kawamura Hamono, Sakai. Founded February 1926 by Kawamura Sutezo, and still operating as a wholesaler and coordinator in Sakai. All of its knives are made by local craftspeople it collaborates with rather than in-house.
Its best-documented pairing is blades forged by Yoshikazu Tanaka and sharpened by Ajioka Tomoyuki, which shows up both under its own Shironiko Kasumi line and in retailer collaborations. It also runs the Choyo and Kikuzuki lines, and a Nakagawa x Sakai Kikumori line with Satoshi Nakagawa.
Historically it is also the wholesaler through which Morihiro's work reached the Choyo series, which makes it a useful node when tracing where a particular sharpener's output ended up.
Hado
Fukui Co., Sakai. The parent traces to Fukui Mokujiro Shoten, founded 1912. The company added a sharpening workshop on the ground floor of its head office and launched Hado as a self-manufactured brand; its own materials date the workshop to 2019 and the brand to 2021, while retailers generally give 2019 for both. Treat the dates as approximate.
The significance is structural: Hado is one of very few Sakai suppliers with its own in-house sharpeners rather than contracted ones. The house look is a thin, wide bevel with mirror-polished spine and choil blending into kurouchi or nashiji, on blades forged by Yoshikazu Tanaka. Lines include Sumi, Kirisame, Junpaku, and stainless SG2 work.
Head sharpener Tadataka Maruyama left in July 2025 to open his own shop in Nara; colleagues took over the bench.
Kagekiyo
Sakai. Kagekiyo is the top line of Baba Hamono, positioned by the company as a quiet, in-the-know brand rather than a volume one. It worked with craftspeople from across Sakai before opening its own blade-finishing workshop in 2017, built explicitly to pursue the house's own ideal of hatsuke rather than accept whatever a contractor delivered.
The sharpening team is led by Nishida-san, who trained under Morihiro. Handles include urushi work by traditional craftsman Momose Juntetsu. Blanks are forged by Sakai smiths including Tanaka and Nakagawa.
Japanese Knife Imports sells an exclusive version of the line as Gesshin Kagekiyo. Company lineage on the Baba side runs founder Baba Ichiji, third generation Baba Shuzou, and Baba Nobuo.
Baba Hamono
Sakai-ku, Sakai. Baba Cutlery Works coordinates the traditional division of labour and also takes OEM and custom orders, which is how a good deal of Sakai output reaches the market under other people's names. It owns both Kagekiyo and Sakai Ichiji.
Founding year is genuinely contested: the company's own English site says 1969, while a manufacturing-district profile and retailer documentation both say 1916. Neither has been reconciled. Founder Kuniharu Baba received the Order of the Rising Sun; Nobuo Baba and Shuzo Baba are named as presidents.
Sakai Ichiji, the second line, takes its name from Kuniharu Baba's nickname and is hand-sharpened by hatsuke craftsmen, though the founding year for that line is not published.
Tetsujin Hamono
Also called Tetsujin Labo. Not a house in the coordinating sense, but a two-craftsman collaboration formed in the late 2010s: blacksmith Toru Tamura and sharpener Naohito Myojin. Tamura's heat treatment is cited at around 63 HRC, and Myojin's grind and the etched flowing finish on the blade face are the visual signature.
The reason to file it here rather than under makers is that neither craftsman's own workshop name appears on the knife; Tetsujin is a distinct brand identity with distribution handled in Japan through Hitohira.
It is a useful example of the smallest viable house: two people, no wholesaler between them, and both names published. Founding year is not stated in any source.
Sakai Takayuki
Aoki Hamono Seisakusho, Sakai. The company was founded in 1947 in Tondabayashi as a Sakai forged-knife wholesaler and trademarked the Sakai Takayuki and Sakai Kikutaka brands in the 1960s. It built its Sanpo factory in 1977 and invited blacksmiths and sharpeners to work in it, so it operates as a coordinator that also houses part of the chain under its own roof.
It is by far the broadest catalogue of any traditional Sakai house, running from inexpensive stainless production knives to named-craftsman work, which makes the brand name alone a poor quality signal. Look at the line.
Named affiliations include smiths Keijiro Doi, Itsuo Doi, and Kenji Togashi, resident sharpener Mitsuo Yamatsuka, and sharpener Hirotsugu Tosa. Brands also include Homura.
Jikko
Sakai. A family business now in its fourth generation under Toshiyuki Jikko, who took over in 2007. It both manufactures through the traditional split of forging and sharpening and sells direct, including a retail presence in Sakai.
The founding date is a mess and worth flagging rather than resolving: the Japanese company page gives January 1901 and also Meiji 33, which is 1900; the English site variously states 1901, 1903, and 1891; an Australian retailer gives 1900 with founder Jikko Itaro. Sub-brands include Shiko, Ginza, and Gion.
Important caution: a separate California company trades as JIKKO Knives and describes itself as working with skilled workshops. It is not confirmed as related to the Sakai company of the same name, and should be treated as a distinct entity.
Masakage
Takefu Knife Village, Echizen, Fukui. Created in 2007 by sharpener Takayuki Shibata as a unified brand for established Takefu makers, though one retailer gives 2008. The model is clean: forging and heat treatment are done by named Echizen smiths, and every blade is then hand sharpened at Shibata's workshop.
That makes it a sharpener-led house, and it is the easiest way to compare Echizen smiths against a constant finishing hand. Lines map to makers: Kiri and Yuki to Hiroshi Kato, Shimo to Yu Kurosaki, Mizu to Katsushige Anryu, with Yoshimi Kato, Takeshi Saji, and Takumi Ikeda also involved.
Note that one retailer lists Masakage's location as Fukuyama, which is where Shibata is based rather than where the blades are forged.
Kanetsune Seki
Kitasho Co., Seki City, Gifu. Kitasho was established in Seki in 1964, though the site elsewhere claims continuity since 1948. It plans and produces its in-house Seki Kanetsune brand while collaborating with local manufacturers, and states that its focus is cutlery made in Seki.
The brand name honours a Muromachi-period swordsmith named Kanetsune, a common naming convention that should not be read as a claim of lineage.
This is a Seki house rather than a Sakai one, and the difference in character is real: Seki production leans toward volume manufacture, machine-assisted processes, and a broader range including outdoor and folding knives. Individual craftsmen are not published, which is itself informative about the model.
Goh Umanosuke Yoshihiro (Yamawaki Hamono)
Sakai. Yamawaki Hamono was established in February 1927 in Shukuyacho, Sakai, and the Goh Umanosuke Yoshihiro brand was registered in 1950. Representative: Yoshitsune Yamawaki. It opened a sharpening factory in Shukuyacho in March 2018.
Sources disagree on the production model. One describes an integrated system handling everything from forging to sharpening in-house; another describes finishing in collaboration with separate artisans for each process within the traditional Sakai division of labour. The 2018 sharpening factory suggests it has been moving from the second toward the first, but that is an inference, not a documented statement.
Name collision warning: the US company Yoshihiro Cutlery (California, since 2008) sells under the Yoshihiro name and is unrelated. Its Hayate Yoshihiro line is described as unknown in Japan.
Documented but not profiled
These are real entities with sourced records, held back from individual entries in this pass rather than excluded: Sakai Ichiji (Baba's second line), Kikuichi, Tamahagane (Kataoka, a manufacturer brand rather than a house), Fujitora (an export label, not a commissioning house), Miura Knives, Takahashikusu (Ittosai-Kotetsu), Zenpou, Suisin, Fu-Rin-Ka-Zan (JCK's own brand), Tsunehisa, Nenohi and Nenox, and Gesshin (Japanese Knife Imports' house label).
Masamoto Sohonten is filed with makers rather than houses. Despite the trade structure around it, no source documents it commissioning outside smiths or togishi, and it presents itself as carrying its founder's own hardening, tempering, and polishing methods.
Names that appear in circulation with no grounded record here yet: Kanehide, Masakane, Masazumi, Morihei Hisamoto, Naozumi, Seki Kanetsugu, Tagai, Tojiro, and MAC.

Natural Stones
Japanese natural whetstones (tennen toishi) are quarried sedimentary rock used for sharpening and polishing. Almost every mine is now closed, so the market runs on old stock, estate stones, and offcuts. This section covers what they do that synthetics do not, how they are categorized, the mines and strata, and how to buy one without getting burned.
What a Natural Stone Actually Does
A synthetic stone is engineered: graded abrasive of a known size in a chosen bond, consistent from one stone to the next, sold with a grit number. A natural stone is rock. Its abrasive particles are mixed in size, generally rounded rather than angular, and held in a matrix that releases them as you work. Nothing about it is standardized, which is the source of both the appeal and the frustration.
Three consequences matter in practice.
Slurry does the work. Most naturals cut with the mud (togijiru) that forms on the surface, not just with the fixed surface itself. As particles release and break down, the effective fineness of the slurry increases during a single session. That is why a single natural stone can behave like a small progression: start with a raised slurry for speed, dilute it as you go, finish on clear water for the finest cut. It is also why slurry stones (nagura) exist, and why a hard stone that will not release its own mud needs one.
Naturals separate hard steel from soft iron. On a traditional iron-clad or single bevel knife, the soft jigane abrades faster and more deeply than the hard hagane core. A natural stone exaggerates that difference, hazing the cladding while leaving the core comparatively bright. This is kasumi, and it is the main technical reason to own a natural. Synthetics tend to polish both materials toward the same brightness, which is why kasumi finishes done on synthetics usually need a finger stone or a natural to finish properly.
Edge character is real but hard to pin down. Users commonly report that a natural edge has more bite than a synthetic edge of similar polish, and that it degrades more gracefully rather than falling off a cliff. The usual explanation is the mixed particle sizes and the rounded abrasive producing a shallow, irregular scratch pattern. Treat this as consensus experience, not measured fact. Opinions differ, and blind comparisons are rare.
The honest trade-offs:
- Cost and consistency. Synthetics at the same performance level cost far less and behave the same every time. Two stones from the same mine and layer can differ substantially.
- Speed. Above roughly the medium range, most naturals are slower than a comparable synthetic. Naturals are finishers, not workhorses. You still want synthetics or diamond plates for repair and bevel setting.
- No grit numbers. Grit equivalents quoted by sellers (for example "approximately 8000") are loose analogies for marketing, not measurements. A soft stone can be very fine, and a hard stone can be relatively coarse. Hardness and fineness are independent properties.
- Buying risk. Attribution is often wrong, stamps are faked, and flaws are common. See the buying notes below.
Nothing here is required to get a knife sharp. A natural stone is worth it if you sharpen traditional clad or single bevel knives and care about the finish, if you hone straight razors, or if you enjoy the process. For a stainless double bevel gyuto, a good synthetic finisher does everything a natural does and does it more predictably.
The Three Categories
Japanese naturals are divided by role in the progression. This is the most important organizing idea, and it explains a common point of confusion: the famous mine lists online cover only the finishing category.

Only the awasedo come from the Kyoto mines. Coarse and medium naturals come from scattered quarries across Japan with unrelated geology. Aizu is a nakado, mined in Fukushima Prefecture, which is why it never appears on the Kyoto awasedo charts despite being the most prized natural medium stone.
Where They Come From
The Kyoto finishing stones come from a narrow seam of very fine sedimentary rock, compressed volcanic ash and radiolarian silica laid down on an ancient seabed and later uplifted into the mountains northwest of Kyoto, in the Umegahata and Atagoyama area and extending west toward Kameoka in the Tamba region. Age figures quoted by sellers vary widely, commonly 150 to 250 million years, occasionally much higher (contested, and not worth taking as precise).
Every famous awasedo mine is a different access point into the same tilted stack of layers. That single fact explains most of the naming convention: mines share layer names (tomae, suita, aisa) because they are cutting the same strata at different points along the seam. Local conditions at each mine determine hardness, fineness, and character, so a Nakayama tomae and an Aiiwatani tomae are the same geological layer with different personalities.
The Kyoto Mines
Mines are conventionally grouped as eastern (higashimono, nearest Kyoto city, generally the hardest and finest, most prestigious) and western or central (nishimono, wider range, more suita, often softer). The grouping is a trade convention rather than a strict boundary, and sources do not agree on every mine's assignment. Hardness is given on seller scales of roughly 1 to 5 with plus marks, where Lv 5+ is glassy hard.

Notes:
- Any mine can produce stones well outside its typical range. Judge the stone, not the label.
- Nearly all mines closed decades ago. Only Ohira and Maruoyama are reported to see occasional extraction, and even those are effectively supplied from stored raw material held by wholesalers.
- Because the mines are closed, the old mine names are no longer protected in any meaningful way, and new stamps carrying famous names exist. A name on a stone is a claim, not proof.
The Strata
Stones are identified by layer as much as by mine. The two big families are the suita group (upper) and the tomae group (lower). Ordering charts vary by source and by mine, so treat sequence as approximate.

Modern diamond plates and coarse synthetics outperform all of these for repair work. Coarse naturals are bought for tradition and feel.
Nagura
Mikawa shiro nagura (三河白名倉). Quarried in the Kitashitara district of Aichi Prefecture. The mine has around twelve layers, of which roughly eight are usable and four are commonly sold: Botan (coarsest), Tenjou, Mejiro, Koma (finest). They are rubbed on a hard base stone to build progressively finer slurries, which is standard practice in Japanese razor honing: work through Botan, Tenjou, and Mejiro, rinsing between each, then Koma or a tomonagura, then clear water on the base stone. The quality-control stamping system was established by Nagayuki Asano (with Kousuke Iwasaki), and the stamps have since passed to Morio Sakamoto, who continues to grade stones. Uncertified nagura are cheap for a reason: hard inclusions can scratch both the blade and the base stone. Koma is genuinely scarce and is the piece most often misrepresented.
Tomonagura (共名倉). A small piece of awasedo, ideally the same stone or slightly softer, used to raise slurry on the base stone without introducing a different abrasive. The safest option for knife work, since it cannot contaminate the scratch pattern.
Grading and Buying
- Hardness is a seller scale, commonly Lv 1 to 5 with plus marks. Softer means more mud, faster cutting, more forgiving, hazier kasumi. Harder means finer feedback, a brighter finish, and less tolerance for sloppy technique. Scales are not standardized between sellers.
- Fineness is independent of hardness. Some sellers rate it separately.
- Size stamps. Traditional full-size bench stones carry wholesaler size classes (30, 40, 60, 80). Koppa (こっぱ) are irregular offcuts and are the sensible entry point: the same rock, a fraction of the outlay, at the cost of size and shape.
- Stamps to know: Maruka (Nakayama stock associated with the Kato family), Maruichi, Asano (Mikawa nagura), Imanishi (Ohira). Stamps carry large premiums and are faked. Whether a famous stamp performs better than an unstamped stone of the same layer is disputed, and some experienced sellers argue openly that it does not.
- Flaws to check: active kan, hard-rimmed su, toxic inclusions (hard black spots that scratch), and cracks. The traditional crack test is tapping the stone and listening for a clear ring rather than a dull thud.
- Attribution on the secondhand market is frequently optimistic or wrong unless the stone carries original stamps or comes from a trusted dealer. Buy the stone as described in front of you, not the name.

Care
- Seal the sides and base with lacquer (traditionally kashew, a cashew-based lacquer) or urethane to keep water out of the stone. Many stones are sold mounted on a wooden base (dai), which serves the same purpose.
- Flatten with a diamond plate. The Atoma 140 and 400 are the community standard.
- Water only, never oil. Do not soak finishers, splash and go. Soaking a fine natural risks softening and cracking.
- Store dry and above freezing. Water trapped in a stone that freezes will crack it.

Buying, Care, and Trade-offs
Buying
Most people arrive at Japanese knives after owning a block set, and the first useful piece of advice is to not buy another one. Sets sold at big box stores carry more knives than anyone uses, and the cost per knife goes into pieces that sit in the block. Three knives cover close to everything in a home kitchen: a large general knife (Gyuto, 210 to 240mm), a mid-sized knife (Santoku, Bunka, Nakiri, or a tall Petty), and a small knife for detail work (Petty, 120 to 150mm). Some purveyors assemble three-knife sets aimed exactly at that gap, which is a reasonable way in.
Start from how you cook, not from a name. A lot of vegetable prep points toward a Nakiri or a tall Bunka. Mostly proteins points toward a Gyuto with more curve, or a Sujihiki for slicing. A small kitchen or a low counter can make a 240mm blade awkward, and a 210mm the better buy. Your height relative to your board, your hand size, and your cutting motion (push cut, pull cut, rock chop) all change what feels right, and none of it is visible in a product photo.
Learn to read specs, because they are the only objective information you get. A good purveyor lists blade length, height at the heel, spine thickness at the heel and often at the midpoint, and total weight, and posts a choil shot (the blade viewed end-on at the heel) and a spine shot. The choil shot is the single most informative image: it shows the grind, how thin the knife is behind the edge, and whether the transition is convex, flat, or hollow. Specs are only useful once you know which numbers you like, so the practical move is to measure knives you already own and use those as your reference points.

Measuring conventions differ by region. Sakai knives are commonly measured from the machi (the step where the blade meets the handle) rather than from the tip to the end of the cutting edge, so a Sakai knife often measures shorter in usable edge than the stated size, by roughly 10 to 15mm. Compare stated sizes across regions with that in mind.
Take recommendations, including good ones, with salt. A recommendation encodes the recommender's criteria, and those criteria are frequently unstated. Someone who values food release and a robust edge will praise a knife that a laser enthusiast finds sluggish, and both are describing the same steel accurately. Before acting on a recommendation, find out what the person is optimizing for.
Price does not buy cutting performance. It buys fit and finish, materials, name, rarity, and hand labor, all of which are real things to want. But an expensive knife from a revered maker can cut poorly for you and still be made exactly as intended: you were not the intended customer. Performance comes from grind and heat treatment, and neither is listed on the spec sheet. This is the strongest argument for buying from purveyors who describe grinds honestly and accept returns.
Where to buy. Specialist purveyors are worth it over general retailers: they publish dimensions and choil shots, many sharpen knives before shipping, and they can tell you what a specific maker's knives are actually like. Handling knives in person, at a shop or through a knife club or meetup, is worth more than any amount of reading. The secondhand market (forum buy/sell/trade sections) is active and lets you try shapes cheaply, but you inherit whatever the previous owner did to the edge and geometry.
Care
Care is mostly one habit, applied every time: hand wash in warm water with mild soap, then dry the blade completely, immediately. Nearly all rust damage traces to a knife that sat wet in a sink, a drying rack, or a wet towel.
The hard rules.
- No dishwasher. Heat, detergent, and knocking against other items damage the edge, the handle, and the finish.
- No soaking, and never leave a knife in a full sink.
- Do not cut bone, frozen food, or hard squash through the seed cavity with a thin Japanese blade. Thin edges chip.
- Do not twist or pry with the tip.
- Scrape food off the board with the spine, not the edge.
- Store the knife protected: a saya, a blade guard, a slotted block, or a magnetic bar with a wood or cork face. Loose in a drawer is how tips break.
Cutting boards matter more than most people expect. Every cut is a collision between the edge and the board, and if the board is harder, the edge loses. Avoid glass, stone, ceramic, steel, and bamboo (bamboo is abrasive and hard on thin edges). Wood and soft synthetic rubber are the standard choices.

Reactive steel: patina is not rust. Carbon and semi-stainless steels darken with use as the surface oxidizes into a stable grey or blue-grey layer. That patina is protective and desirable. Rust is orange or red, flaky, and active, and it needs to come off. Some owners force a patina early (a soak or wipe with something acidic) to get ahead of spot rust; opinions differ on whether this is worth doing versus simply letting it develop. Iron cladding on san-mai knives rusts more readily than the hard core, and textured finishes like kurouchi, tsuchime, and nashiji trap moisture in their hollows, so they need more attentive drying, stainless or not.
Removing rust. Work early, while it is surface-level. A dedicated rust eraser, or fine wet sandpaper wrapped around a cork, worked in straight strokes along the blade's length, will take off fresh rust without gouging. Baking soda paste and mild abrasive cleansers are also commonly used. Avoid steel wool. Expect a lighter patch where you worked, which will re-patina. Deep pits and anything that would require reshaping should go to a professional sharpener or back to the maker.
Oiling. For daily use, a thoroughly dry blade is usually enough. For storage, humid climates, or a knife going unused for weeks, wipe on a very thin coat of camellia (tsubaki) oil or food-grade mineral oil. Do not use cooking oils, which oxidize, go sticky, and can smell.
Handles and sayas. Wooden Wa handles benefit from occasional light oiling to keep them from drying and cracking; do not soak them, since water at the tang is a common failure point. Wood sayas should only take a fully dry knife.
Edge upkeep. Between sharpenings, a fine ceramic rod or a leather strop will realign and refresh an edge. Grooved steel honing rods are usually discouraged for hard Japanese steels at HRC 60 and above, where the edge is more likely to chip than bend. Sharpening frequency depends entirely on use, steel, and board, so treat any fixed schedule as a starting point rather than a rule: sharpen when the knife stops biting into a tomato skin under its own weight, not on a calendar.
Trade-offs
The second thing to understand about Japanese knives, after "opinions vary," is that almost every property is bought at the expense of another. There is no knife that is thin and robust, hard and forgiving, specialized and versatile. Choosing well means deciding which compromise you are comfortable living with, not finding the option without one.

A few of these compound. Hardness, thinness, and carbon steel tend to travel together, which is why the knife that feels most impressive on a tomato is also the one most likely to punish a moment of inattention. The genuinely important question is not which knife performs best in a video, but which set of demands fits your actual routine. A knife that needs drying within a minute is a fine choice for someone who cooks alone and cleans as they go, and a bad choice in a household where anyone might put it in the sink.
The other compound trade-off is between maintenance you enjoy and maintenance you tolerate. Sharpening on stones is a real hobby with a real learning curve. If it appeals, hard carbon steel rewards it. If it does not, a mid-hardness stainless knife sent out for sharpening once or twice a year will keep you better fed than a high-end carbon blade you are slightly afraid of.
Finally, price is not on this table as a performance axis on purpose. Money reliably buys materials, finish, and craftsmanship, and does not reliably buy a better cutter. Grind and heat treatment determine performance, they are invisible in photographs, and a well-ground blade in ordinary steel will outcut a poorly ground blade in a celebrated one.

The Retailer Landscape
In Japanese cutlery the shop you buy from matters nearly as much as the smith who forged the blade. Most Japanese makers do not sell to the public in English, do not ship internationally, and in many cases do not have a website at all. What reaches a buyer outside Japan has passed through an importer or exporter who chose which knives to carry, decided what condition they leave the shop in, and is the only party who will answer the phone when something is wrong. Two shops selling the same maker's 210mm Gyuto can deliver meaningfully different objects.
What a vendor actually does. Beyond stocking, a good specialist adds three things. First, selection: curating specific makers, specific grinds, and often specific smith and sharpener pairings, then explaining who did what. Second, preparation: many shops thin, true, and sharpen knives before shipping, because factory or workshop edges vary and some arrive with visible grind flaws. Third, service: sharpening, thinning, chip repair, handle replacement, and warranty handling. A shop that only drop-ships sealed boxes is doing none of this, which is fine if the price reflects it and less fine if it does not.
Signs of a serious shop. Listings that state actual measured dimensions (blade length, height at the heel, spine thickness, weight) rather than the maker's nominal numbers. Choil and spine photographs, which reveal grind geometry better than any description. Naming the forger and the sharpener separately where they differ. Plain statements about steel, cladding, and reactivity. Honest handling of the fact that handmade knives vary unit to unit, including fit and finish tolerances on rustic lines. A stated policy on used or sharpened returns, since most shops cannot take back a knife that has been cut with. Community reputation matters here and is worth checking, though it is opinion rather than fact.
Categories of seller. Roughly five, and they trade off differently.
- Japan-based exporters sell direct from Japan to the world, usually with the broadest catalogs and the shortest supply chain, but with slower recourse and buyer-paid import duties.
- Japan domestic brick-and-mortar shops, concentrated in Kappabashi (Tokyo), Doguyasuji (Osaka), and Nishiki Market (Kyoto), where knives can be handled in person and engraving is often done on site. Some ship overseas, many do not.
- Western specialist importers carry a curated subset at higher prices, with local shipping, local returns, in-house sharpening, and often exclusive lines. This is where most enthusiasts outside Japan end up.
- General cutlery and cookware retailers with a Japanese program alongside German and French brands. Wider stock, shallower specialization.
- Maker-direct sales, rare but real for a handful of smiths who run their own English storefronts.
Marketplace listings on Amazon, eBay, and similar sit outside these categories. Genuine knives are sold there, but so are counterfeits, misrepresented brands, and grey-market stock without warranty, and it is difficult to tell which is which from a listing. Community consensus is to avoid marketplaces unless the seller is a known shop selling under its own name.
Exclusivity and stock. Many house brands allocate lines to a small number of overseas carriers, so a given series may exist at only two or three shops worldwide. Popular makers work in small batches, and restocks are announced by newsletter or social media and can sell out within minutes. Waitlists and preorders are normal. This is a supply constraint, not a marketing tactic, though it functions as both.
Cross-border costs. Buying from Japan or another region moves import duty, VAT or GST, and customs handling onto the buyer, and makes a return expensive enough that it is often not worth doing. Some shops advertise import fees covered; most do not. Factor this in before comparing a Japan-based catalog against a domestic one.
Producer-retailer hybrids. A few long-established Japanese businesses both make and sell, so they do not fit cleanly on either side of the line. Aritsugu (Kyoto, founded 1560) operates its own workshops while running a retail storefront in Nishiki Market. Sakai Ichimonji Mitsuhide (Osaka) functions as both a house brand and a specialist retailer for Sakai-forged blades. Treat these as their own category rather than forcing them into one.

Glossary
The terms you will meet in maker listings, retailer product pages, forum threads, and the rest of this guide. Grouped by subject rather than alphabetically, because most of these only make sense next to their neighbours.
Japanese script is given only where the spelling is standard and well attested. Where a cell reads "n/a", either the term is Western trade vocabulary with no Japanese equivalent, or the Japanese spelling is not confidently established. Romanization is without macrons throughout (Gyuto, not Gyūtō).
A note on how these words get used: a lot of the vocabulary in the Western Japanese-knife market is loose. Retailers, forums, and makers do not always agree, and some widely repeated "Japanese terms" in English-language sources are coinages that no Japanese workshop would recognise. Where usage is genuinely contested, it says so in the entry.
Blade anatomy

Heat treatment

| Nashiji | 梨地 | A fine pebbled texture, named for the skin of a Japanese pear. |
| Tsuchime | 槌目 | Hammered dimpling on the blade face, hand-hammered or press-stamped. Commonly credited with improving food release. The effect is real but modest, and often overstated in marketing. |
| Damascus / etched cladding | n/a | Layered cladding brought out by acid etching, which reacts differently with the different steels. Cosmetic. It tells you nothing about the core. |
| Mirror polish | n/a | Fully reflective finish worked through progressively finer abrasives. Largely aesthetic, and most often seen on honyaki and presentation pieces. Shows every subsequent scratch. |

Handles and fittings

| Ho wood | 朴 | Japanese magnolia, the default wa-handle wood. Light, cheap, easy to work, and quick to replace, which is the point. |
| Kuchigane | 口金 | The ferrule between handle and blade, commonly buffalo horn or resin. Reinforces the wood where it meets the tang. Also called kakumaki (角巻) in some usage. |
| Saya | 鞘 | A wooden sheath, usually ho wood, held by a pin. Standard for storage and transport, particularly on single bevels. |
| Rehandle | n/a | Replacing the handle. Straightforward on a friction-fit wa-handle and a common first project in the hobby; not really an option on a riveted yo-handle. |
| Handle collar gap | n/a | A visible gap where the handle meets the ferrule or tang shoulder. A fit-and-finish marker, and a route for moisture to the tang over time. |

Market and enthusiast slang
Mostly Western retail and forum vocabulary. Little of it has a Japanese equivalent.

| Puck | Mildly critical term for a knife thick enough behind the edge that durability no longer justifies the loss in cutting performance. |
| Grail | A knife someone is chasing: limited output, long waitlist, or a strong maker reputation. Not a fixed price threshold. |
| Sleeper | A knife regarded as underpriced for what it is, usually because it has not yet drawn wide attention. |
| Beater | A cheap or expendable knife kept for rough work so the good ones are not risked on bone or frozen food. |
| Cult maker | A smith or house with a following well out of proportion to their production volume. |
| Fit and finish | Handle fit, spine and choil rounding, evenness of grind lines, general assembly quality. Separate from how the knife cuts, and the most common thing reviews actually measure. |
| Choil shot | A head-on close-up of the blade at the heel, showing thickness, taper, and grind. The single most useful photograph in any listing, and its absence is worth noticing. |
| Out-of-box sharpness | How sharp a knife arrives. Varies widely by workshop, and is unrelated to how well the edge holds afterwards. |
| Wabi-sabi | Borrowed aesthetic term for the appeal of visible forging marks, asymmetry, and rustic finishes rather than uniform machine polish. |
| Production vs hand-forged | Machine-made in volume versus individually hammered. The performance argument between them is unresolved and probably unresolvable, since heat treatment and grinding dominate the outcome either way. |
| Full custom / semi-custom | Made to a buyer's specification, versus limited buyer choice (handle, length, finish) within an otherwise standard model. |
| Collab / retailer exclusive | A run produced by a maker to a retailer's specified handle, finish, or steel, sold only through that retailer. Very common in the current market. |
| Drop / restock / waitlist | Release of a new batch, replenishment of a sold-out item, and a queue for allocation. Standard mechanics for high-demand makers. |
| Community reporting | Information from forums, Discord, or informal discussion rather than a documented source. Used in this guide with hedged language and never stated as settled fact. |
